Ingredients:
3/4 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
3/4 cup cold water
2 egg yolks slightly beaten
1 teaspoon lemon peel grated
juice of medium lemon
1 tablespoon butter or margarine
Makes: About 1 cup!.


instructions
Combine sugar, cornstarch and salt in a small saucepan!. Gradually add water and whisk until well blended!. Whisk in egg yolks, lemon peel and lemon juice!. Cook over medium heat, whisking constantly until thick and bubbly!. Boil one minute; remove from heat!. Stir in butter!. Cool to room temperature, without stirring!.

This coconut filling is a big hit in my house, and it's really easy:

1 pint (16 ounces) sour cream
1 cup granulated sugar
3 cups coconut
3 cups frozen thawed whipped topping (8 ounces), light or regular

SUSZY "Q" FILLING FOR CAKE

Bake chocolate cake of your choice, cool and split with a thread to make 2 halves!.
Make Suszy "Q" filling of these ingredients: 1 cup of milk and 4 tablespoons of flour!. Cook until thick and let cool!. Mix 1/2 cup butter, 1/2 cup of shortening, 1 cup of sugar, 2 teaspoons of vanilla!. Beat until fluffy and add to the first and beat on high speed for 4 minutes!. Put filling on cake and replace the top!.







BANANA FILLING:

May be used to ice cake but is not real sweet!. 4 tbsp!. flour 3/4 c!. cold water 2 sm!. mashed bananas 1 egg, well beaten 2 tbsp!. butter 1 tsp!. vanilla 1/2 c!. chopped nuts
Combine and cook until thick sugar, flour, water, egg, butter and vanilla!. Then add 2 bananas and chopped nuts







Cream Cheese Filling
Ingredients
1 package (8 oz!.) cream cheese, softened
1/2 cup confectioners' sugar
1/4 cup milk
Yield: Makes about 1 1/2 cups!.
Directions
In large bowl, combine cream cheese, sugar, and milk!.
Beat with mixer until well blended!.
Refrigerate until ready to use!.

This is to be a layer cake, correct!? Use the same frosting/icing as for the outside of the cake!. Buttercream is easiest!.

However, I do use Jello Pudding and Pie Filling for the filling in layer cakes frequently!. The instant kind that you just beat the milk into!. Use the Pie Filling instructions!.

You could also use Cool Whip and Cream Cheese!. Soften the 8 oz brick of cream cheese (30 seconds in Microwave, unwrapped) and beat it fluffy then blend in small carton of cool whip!.

Get the canned pie fillings!. They make excellent fillings for cakes!. Spread them thin, because they are very sweet!.

Another thing you could use it fruit preserves!. Just warm them a little in the microwave to thin and spread between the layers of the cake!.

I have also had good results with pudding mixed with a little cool whip!.Www@FoodAQ@Com

You could even just use some fruit preserves as a filling, or fruit preserves and then a layer of buttercream, whipped cream, or pastry cream/pudding!.Www@FoodAQ@Com
