Scallops!.!.!.!.very easy to do!. It depends on if you are talking bay or sea scallops!. Bay are small!.!.!.sea scallops are the very large ones!. the secret it to NOT overcook!.!.!.take them off when they are a tad underdone and let them rest!.!.!.!.they will finish on their own!. NEVER SOAK SCALLOPS!.!.!.In ANYTHING!. That is a HUGE mistake unless you are using them in chowder or soup!.

First off if they have been sitting in water or liquid then they won't fry or grill right!.!.!.!.you need to use them in soup or chowder!.

A lot of places put scallops in liquid!.!.!.!.and scallops are sponges!. They will absorb twice their weight in water!.!.!.and you will never get a sear out of them!. That is why when you fry them you get a lot of liquid!.

You need to get dry packed scallops!.!.!.ones NOT in water!.!.and they should be fresh!.!.!.frozen is watery too!. But if you do get dry packed frozen scallops!.!.!.thaw them out on paper towels and keep changing them to absorb any liquid that comes off of them!. NEVER fry them or grill them frozen!.!.!.they will be dry and nasty!. It is like they are what they are and when they hit a grill they will go!.!.!.!.OOOOOHHHHHH and seize up and then they are though!. If you have them thawed out and close to room temp!.!.!.they stay relaxed and cook much better!.

You can grill and fry them then!.!.!.!.but you have to season them before you put them in the pan or grill!.

you must put them in a VERY HOT Pan that is almost smoking or the a T of butter and a T of oil you use is rippling!.!.!.!.(you need the oil to raise the temperature of butter so it won't burn!.)

pan fry in some clarified butter, scallops are sweet and all i use is salt, pepper, and crushed red pepper, i don't use a sauce, maybe more clarified butter, for the sauce!. but the bacon wrapped are good, but kinda porky, these are scallops we are talking about, some of the best seafood in my opinion, don't dumb them down with with pork, i love pork too don't get me wrong!. Fried Scallops

Ingredients
1000g fresh scallops
Cracker crumbs (fined)
Salt and pepper
Egg
Frying oil
Slices of lemon (dipped in parsley)

c!. Roll in cracker crumbs and season with salt and pepper!.
d!. Dip in egg and again in crumbs!.

My way of cook Scallops is firsty dip in warm water for some 2 hours and then fry it with gentle fire, and then put them into a bowl and steam it for some one hour or so!. Before steaming, you add a little oil, salt!. You then can it any time as you wish, such as putting into a soup, into noodles, into checkens, fishes any dishes you make!.
