i just peel, core, slice, sprinkle with lemon juice and put in freezer bags and freeze them, then all winter i take them out and make pies and apple crisp and fritters and muffins and apple pancakes and so on and so forth, i don't stew them, or parboil them or cook them, i just freeze them raw!. they work fine and i have been doing it for years!.!.!.!.!.!.my son really likes it when i take a bag out and make homemade chunky style cinnamon apple sauce for thanksgiving dinner!.!.!.!.!.!.!.!.good luck and experiment, cooking is a hands on, trial and error learning experience!.!.!.!.!.!.!.!.!.!.!.Www@FoodAQ@Com
I would peel them and cut into slices, add enough water to cover and par boil them (once water reaches a boil, cook for 1 or 2 minutes)!. Par boiling kills the germs - you can freeze any fresh fruit or veggies this way!. Freeze in small bags so they will be easy to separate when you want to use them
You can take out as many as you need and follow your recipe!. Don't add any sugar or spices until you are ready to use them!. Www@FoodAQ@Com

You can stew them and freeze them!. Peel n slice, put in a pot with a little water, just enough to cover the bottom of the pan!. Add sugar if you like, not neccesary though!. It can be added when you defrost and use them!. Anyway, simmer them over medium to gentle heat till they soften up; stew!. Then wait till they cool, bag or put in containers and freeze!.
