France is a big country and regions have all got their own particular specialities!. Much of it is peasant food, dating from the days when the rich in France got the best of everything and the peasants got what was left over!. So the French have ways of making delicious food out of things that many other nationalities don't eat much (tripe, for example and no I don't know what it's like, I wouldn't try it if you paid me!)!. You might try searching for 'French provincial cooking' by Elizabeth David, a cookbook from the 1950s with lots of housewife dishes in!. Food I can call to mind having eaten in France and loved is as follows:

Boeuf bourguignon (a beef casserole)
Confit de canard
Daube (provencal beef stew)
Sole Veronique (sole with grapes)
Bouillabaisse (classic Mediterreanean fish stew)
Brandade de mourue (creamed salt cod)
Carpaccio de boeuf (raw fillet steak thinly sliced and WONDERFUL)
Coq au vin (wonderful chicken in red wine recipe)
Potage Crecy (carrot soup)
Onion soupl which is always served with cheesy croutons
Omelettes (best made by Mere Poulard)
Slow-cooked salt marsh lamb
Crudites - raw vegetables with a dip
Pate and rillette (similar to pate)
