Apple adds a sweet flavor to these savory sausage patties!.

1/3 cup chopped onion
1 pound bulk pork sausage
1 medium (1 cup) apple, peeled, finely shredded
1/2 teaspoon rubbed sage
Dash ground red pepper

Stir together all ingredients in large bowl!. Shape into 12 (3-inch) patties!. Cover; refrigerate at least 30 minutes!.

Heat 10-inch skillet over medium-high heat!. Add sausage patties; reduce heat to medium!. Cook 5 minutes; turn!. Continue cooking until patties are no longer pink (3 to 5 minutes)!.

TIP: Apple sausage patties can be shaped ahead of time!. Wrap in plastic food wrap; refrigerate up to 24 hours!.



OLD-FASHIONED APPLE CRISP

Use award-winning butter in the topping of this classic apple crisp recipe!. Serve this dessert recipe warm from the oven!.


6 medium (6 cups) apples, peeled, cored, sliced
3/4 cup firmly packed brown sugar
3/4 cup uncooked old-fashioned oats
1/2 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 cup cold LAND O LAKES? Butter, cut into chunks
Vanilla ice cream, if desired


Heat oven to 375°F!. Place apples in ungreased 2-quart baking dish!.

Combine brown sugar, oats, flour and cinnamon in medium bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs!. Sprinkle sugar mixture over apples!. Bake for 25 to 35 minutes or until apples are tender and topping is golden brown!. Serve warm with ice cream, if desired!.

Select an apple variety recommended for baking!. We used Braeburn apples in this recipe!. This variety of apple is slightly tart with a crisp texture and is excellent for both baking and cooking as well as eating fresh!.



APPLE BUTTER

This old fashioned apple butter recipe tastes heavenly spread on pancakes, waffles or warm bread!.

3 pounds (9 medium) tart cooking apples, peeled, cored, quartered
1/2 cup apple cider or apple juice
1 1/2 cups sugar
1/2 cup firmly packed brown sugar
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground nutmeg
2 tablespoons cider vinegar

Place apples and apple cider in 4-quart saucepan!. Cover; cook over medium heat, stirring occasionally, until apples are very soft (25 to 30 minutes)!.

Place apple mixture in food processor bowl fitted with metal blade or 5-cup blender container!. Cover; process until smooth (1 to 2 minutes)!.

Return apple mixture to same pan; stir in all remaining ingredients!. Cook over low heat, stirring often, until mixture is very thick (30 to 45 minutes)!.

Serve warm or cold on pancakes, waffles, toast or warm breads!. Store refrigerated!.Www@FoodAQ@Com

Pecan-and-Dried Fruit Baked Apples

1/4 cup chopped pecans
6 large Gala or Rome apples, cored
1 tablespoon lemon juice
2 tablespoons butter, softened and divided
1/2 cup raisins
1/4 cup dried cranberries
1/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup apple cider
1/4 teaspoon vanilla extract
2 tablespoons rum (optional)
Garnishes: whipped cream, toasted pecans

Place pecans on a baking sheet, and bake at 350° for 12 to 15 minutes or until golden brown, stirring once!. Set pecans aside!.
Make 4 evenly spaced vertical cuts through each apple, stopping halfway from bottom!. Brush insides of apples with lemon juice!. Place apples in a 9-inch pie plate!.

Combine 1 tablespoon butter, raisins, and next 4 ingredients!. Stuff mixture evenly into apples, pressing into center of each apple!. Top evenly with remaining 1 tablespoon butter!. Pour cider, vanilla, and, if desired, rum around apples in pieplate!.

Bake at 350° for 1 hour and 20 minutes, basting twice every 30 minutes or until apples are tender!. Transfer apples to a serving dish, reserving juices, and keep warm!.

Pour juices through a wire-mesh strainer into a small saucepan!. Bring to a boil; reduce heat and simmer over medium heat 8 to 10 minutes or until mixture is thickened and is syrup consistency!. Drizzle over warm apples; garnish, if desired!. Serve immediately!.

Caramel Apple Walnut Cake

Topping:
1/2 cup walnuts
salt
12 to 15 unwrapped candies, or 1/3 cup caramel cut from a block
3 tablespoons heavy cream or whole milk

Cake:
1 cup sugar
1/2 cup butter
1/2 teaspoon ground cinnamon
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup sour cream or yogurt
2 cups all-purpose Flour

Filling:
2 large apples, peeled, cored, cut into 8 wedges each
2 tablespoons granulated sugar
1 teaspoon vanilla extract

Preheat oven to 350oF!. Lightly grease a 9" round cake pan at least 2" deep; or a 9" springform pan!.

Spread the walnuts in a single layer in an ungreased pan, and bake them for 8 to 10 minutes, until they're a light golden brown!. Remove them from the oven, and sprinkle very lightly with salt!. Set them aside!.

Beat together the sugar, butter, cinnamon, baking powder, salt and vanilla till smooth!. Add the eggs!. Beat till thoroughly combined!.
Stir in the sour cream or yogurt alternately with the flour, using the low speed of your mixer!. The batter will be stiff!.

Spoon the batter into the prepared pan, smoothing the top with a spatula as best you can!.
Toss the apple wedges with the sugar and vanilla till apples are thoroughly coated!. Arrange the apples atop the cake, pushing them into the stiff batter gently so they're partially submerged!.

Bake the cake for 65 minutes, till it's golden brown on top and a toothpick or cake tester inserted into the center comes out clean!.
Remove the cake from the oven, and turn it out onto a rack, apple-side up!.

Place the caramel and cream in a microwave-safe bowl, and heat till the cream is showing bubbles, and the caramel is soft!. Stir the caramel and cream till smooth!. Spoon the caramel over the cake, dripping it down into the crevices around the apples!. Scatter the walnuts on top!. Serve warm, or at room temperature!.

Ingredients:
CRUST:
1-1/2 cups graham cracker crumbs
1/2 cup sugar
1/3 cup butter or margarine, melted
APPLE TOPPING:
1/2 cup sugar
1/2 cup lemon juice
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
Dash ground nutmeg
6 medium Granny Smith or tart apples, peeled and thinly sliced
1/2 cup chopped pecans
FILLING:
3 packages (8 ounces each) cream cheese, softened
3 eggs
3/4 cup sugar
1-1/2 teaspoon vanilla extract
Directions:
Combine crust ingredients; press into bottom and 1-1/2-in!. up sides of a 9-in!. springform pan!. Refrigerate!. For topping, place sugar, lemon juice, flour, cinnamon and nutmeg in Dutch oven; mix well!. Add apples!. Bring to a boil; cover and simmer 15 minutes or just until apples are tender!. Gently stir as needed!. Remove from heat; carefully stir in pecans!. Cool to room temperature!. Set aside 3 tablespoons of topping; refrigerate the rest until serving time!. For filling, combine cream cheese, eggs, sugar and vanilla in a large mixing bowl; mix until well blended!. Pour filling into crust!. Bake at 350° for 50 minutes!. Turn oven off, but leave cheesecake in oven with door ajar for another 1 hour!. Cool to room temperature; chill at least 4 hours!. Before serving, top with Apple Topping!.Www@FoodAQ@Com

Apple Pie
Ingredients
2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening (recommended: Crisco)
Ice water
Filling, recipe follows
Serving suggestion: warm with vanilla ice-cream
Directions
Preheat oven to 375 degrees F!.

In a medium-mixing bowl cut the shortening and salt into the flour by hand or with a pastry blender hands until it's the texture of cornmeal!. Sprinkle 1 tablespoon of ice water over the mixture and mix just until the dough is moistened!. Repeat by adding 6 to 8 tablespoons water (one at a time) until all the dough is just moist!. Take care not to over mix!.

Preheat the oven to 375 degrees F!. Divide the dough in half and roll into a ball!. Roll 1 ball into a circle to fit a 9 to 10-inch pie plate!. To transfer the pastry to the pie plate, wrap it around a rolling pin and ease it into the pie plate!. Be careful not to stretch the pastry!. Trim it even with the edges of the pie plate!. Add the apple filling into the pastry lined pie plate!. Make sure they are laying flat!. Cut butter into small pieces and put on top of the filling!.

Roll the remaining pastry into a 12-inch circle!. Place on top of the filling!. Trim off 1-inch beyond the edge of the pie plate!. Crimp the edges as desired!. Cut slits to allow steam to escape when baking!. Sprinkle a little sugar and cinnamon over the pie!.

Cover the edges with foil to prevent over browning!. Bake for 25 minutes!. Remove the foil and bake for another 20 to 25 minutes, or until it is golden brown!. Serve warm with vanilla ice cream!.

Filling:
1/2 cup to 1 cup all-purpose flour
6 to 7 cups apples cut into thin slices
1 cup white sugar
1 cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter
In a medium bowl combine the apples, with the brown and white sugar!. Add flour, cinnamon and continue mixing until they are well coated!.

Apple Crisp

Ingredients
5 pounds of Apples
Grated zest of 1 orange
Grated zest of 1 lemon
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
For the topping:
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced
Directions
Preheat the oven to 350 degrees F!. Butter a 9 by 14 by 2-inch oval baking dish!.

Peel, core, and cut the apples into large wedges!. Combine the apples with the zests, juices, sugar, and spices!. Pour into the dish!.

To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment!. Mix on low speed until the mixture is crumbly and the butter is the size of peas!. Scatter evenly over the apples!.

Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly!. Serve warm!.


Apple Flapjacks

Ingredients
1 3/4 cups all-purpose flour, plus more as needed
3 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon fine salt
1/8 teaspoon freshly ground nutmeg
2 large eggs at room temperature
1 1/4 cups milk at room temperature
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, plus more as needed
4 Macintosh or other small apples
Warm maple syrup, as an accompaniment
Directions
Preheat the oven to 200 degrees F!. Set a wire rack on a baking sheet and place in the oven!.

Whisk 1 3/4 cups flour, the sugar, baking powder, salt and nutmeg in a large bowl!. In small bowl or liquid measuring cup, whisk the eggs with the milk and vanilla extract!. Melt 3 tablespoons butter in a large well-seasoned cast-iron or non stick skillet over medium heat!. Whisk the butter into the milk mixture!. Add the liquid ingredients to the dry mixture, and whisk just long enough to make a thick batter, (if there are a couple lumps that's okay)!.

Using a melon baler or an apple corer, peel and core the apples keeping them whole!. Slice the apples crosswise to make 1/4-inch rounds!. Put some flour on a plate and dredge the apple slices until lightly coated, shaking off any excess flour!.

In the same skillet over medium to medium-low heat, place 3 apple slices about 3-inches apart in the skillet!. Cook without turning until browned, about 3 minutes!. Ladle about 2 tablespoons of the batter over each apple ring!. Cook, until bubbles break the surface of the pancakes, and the undersides are golden brown, about 2 to 3 minutes!. Add a nut-sized bit of butter to the skillet, as needed, and flip the pancakes, cook until golden on the underside, about 1 minute more!.

Serve immediately or transfer to oven to keep warm!. Repeat with the remaining apples and batter!. Serve with warm maple syrup!.
