It sounds like you are curious as to why your homemade pizza doesnt "string" like the pizzeria!.

Most pre-bagged shredded mozzarella cheese at the supermarket is "part-skim", which means it doesn't contain alot of milkfat, and therefore doesnt "string" properly, whereas most pizzerias use "whole milk" mozzarella, unfortunately you can only usually find whole milk mozzarella in blocks, so you have to grate it yourself, but you'll find it not only strings, but tastes much better on your pizza!.Www@FoodAQ@Com

Pizzarias just use mozzerella, but you don't have to be limited to just that!. You can use whatever cheese you like best!. Use cheese that melts well, like monteray jack, fontina, or gargonzola with spinach!.

In my humble opinion, If you're going to use plain mozzerella, I noticed that the pre-shredded ones seem to melt better than the block you grate yourself!.Www@FoodAQ@Com

usually just shredded mozzerella!. But some people put parmesan on it too!. I don't!. Get the shredded like Sorrenti's or whatever your grocer carries!.

Pizza with Extra cheese for me please!. Www@FoodAQ@Com

Usually a mixture of tasty and mozzarella!.!.Sometimes a little cheddar too!.!.!.
Healthier pizzas use low-fat ricotta!.Www@FoodAQ@Com

you can use:
mozzarella
cheddar
asiago
parmesan
romano

they are all good!.
