Here are two basic ways of making gravy from roast drippings, one using corn starch, the other using flour!. In each case, you start with the roast drippings!. You may have much more drippings than you need for the amount of gravy you want to make!. You can follow this guideline - for each cup of gravy you would like to make, start with a tablespoon of drippings!. So, if you want to make 2 cups of gravy, drain all but 2 tablespoons of fat and drippings from the roasting pan (set aside for future use)!. These instructions will be for the end result of 2 cups of gravy, but you can easily divide or multiply to adjust for how much gravy you want to make!.

Making Gravy with Flour

1 Remove the roast from the pan!. Place pan on stove on medium high heat!. Pour off all but 2 Tbsp of the drippings in the pan!.

2 Into the 2 tablespoons of drippings in the pan stir in 1 to 2 tablespoons of flour!. Stir with a wire whisk until the flour has thickened and the gravy is smooth!. Continue to cook slowly to brown the flour, and stir constantly!.

3 Slowly add back some of the previously removed drippings (remove some of the fat beforehand if there is a lot of fat)!. In addition, add either water, milk, stock, or cream to the gravy, enough to make 2 cups!. Season the gravy with salt and pepper and herbs!.Www@FoodAQ@Com

You can make it with your grease from whatever meat you have cooked!. Put your grease in a skillet, get it hot then add flour stirring with a whisk, until it is thick like a paste!. Let it cook for a few to brown the flour then add milk, about 4 cups, stirring constantly with your whisk!. When that is thickened add about 4 more cups of milk and stir with your whisk until that is thickened!. If you have cooked meat in the oven, such a turkey, that produces more juice than grease, you should do a water based gravy!. Get your juices to the boiling point, adding water if it is not enough!. Meanwhile, in a small bowl, mix cornstarch with cold water until it is in liquid form!. Once your juices are boiling, wisk in the cornstarch mixture and it will thicken your gravy!. If it is not thick enough, just repeat the cornstarch mixture, adding a little at a time until your desired consistency!. Of course with either recipe you should add salt and pepper to your taste!. Hope this helps!Www@FoodAQ@Com

after roasting a steak, take the liquid from that pan and put it in a small sauce pan, and mix in a cup of hot water, bring to a boil while wisking in a table-spoon of corn starch, stir vigourously with a wisk to prevent lumps and bring to a boil!.

Thats genuine gravy, no artificial things or chemicals or colours or msg or liquid gums/rubber or anything!.
