My mom used to make this for us when we were all at home (there were twelve kids) and it was delicious, plus it went far in serving all of us!.!.!.!.Brown the beef cubes in a little margarine or oil!.!.!.Add some beef stock or consomme or broth (canned is best, but you could use the boullion cubes and water if you had to!.) Cover the meat well!.!.!.simmer for about 1 hour!.!.!.serve over rice or noodles!.!.!.!.You could thicken the liquid with some flour (use Wondra, in a blue can in the baking section of the grocery store!.!.!.then you just sprinkle it on and stir in) or leave it liquidy (thats how we liked it!.!.!.) You could add some mushrooms if you wanted!.!.!.its very tasty and economical!.!.!.add a green salad, and you're good to go!.Www@FoodAQ@Com

1 1/2 to 2 lbs lean stew meat
2 pkgs au jou mix prepared as per package directions
water needed for the au jou mixes
1 large package frozen egg noodles (can use dry noodles but it will be a far inferior experience using them)
pepper to taste

Directions
Prepare the au jou mixes as recommended on the packages so will end up with 5 to 6 cups of au jou!.
Put the stew meat into the slow cooker!.
Pour the au jou juice over the meat and turn slow cooker onto high cooking till meat tender!. Usually takes 6 to 8 hours!.
Check at 6 hours and if meat is beginning to get tender add the frozen egg noodles to the slow cooker!.
Continue cooking on high for another hour to let the noodles get done!.
You can use dry wide noodles but this is a hearty dish and the frozen egg noodles compliment the dish much better and soak up some of the juices with much better flavors!.
You can buy frozen egg noodles or make your own both are very good!.

Braised Beef over Egg Noodles

Use of a Pressure Cooker works best

Brown meat in a little olive oil with onions, crushed garlic, salt/pepper, crushed red pepper flakes, and parsley, and lots of celery!.!.

Once brown, add three cans beef gravy, a little soy sauce, and a splash or two of wustishire(sp) and about 1/2 cup of red wine-if you can drink it, it's good to cook with!.
Put the cover on it and set heat to medium to high, once it starts to build pressure, turn heat to medium, cook for 16-18 minutes!.

Pour over egg noodles, serve with broccoli and biscuits!.
Yummy!.

This is one of my family's favorites and is very easy to make!.
If you don't have a pressure cooker, you can make it on the stove in a regular pot, you'll just have to cook it longer or until the meat is tender!.Www@FoodAQ@Com


BEEF AND VENISON BOURGUIGNON

MEAT MIXTURE:

1/2 to 1 lb!. bacon, cut into strips 1/4 x 1 1/2 inch long
1 tbsp!. olive oil
3-5 lbs!. lean stewing beef or venison steak, cut in 2-inch cubes
2-3 sliced carrots
2 sm!. onions, cut into ringlets
1 tsp!. salt
1/4 tsp!. pepper
2 tbsp!. flour

Cook bacon until crispy, then add olive oil to saute bacon!. Remove bacon!. Saute beef or venison in "hot, smoking" oil!. (Use dried beef and venison as it will brown nicer!.) Remove meat!. Saute carrot, onions in same fat!. Add vegetables to beef mixture!. Throw out remaining fat!. Sprinkle meat mixture with flour and seasonings!. Toss lightly in uncovered casserole dish in oven at 450 degrees for 4 minutes, mix!. Return to oven for 4 minutes, mix again!. Reduce temperature to 325 degrees!.

WINE MIXTURE:

3 c!. red wine (inexpensive)
2-3 c!. beef stock or bouillon
1 tbsp!. tomato paste
2 cloves garlic, mashed
1/2 tsp!. thyme
Bay leaf, crumbled
1 lg!. onion, chopped and sauteed
1 lb!. mushrooms, quartered and sauteed

Prepare 1/2 cup wine with remaining ingredients, mix well!. Pour over meat!. Combine remaining wine with bouillon!. Mix into meat mixture so that it is covered!. Cook slowly at 325 degrees for 2 1/2 to 3 hours until meat is tender!.

When ready to serve, saute mushrooms and onions!. Distribute evenly over meat!. Serve with mashed potatoes, noodles or rice!. Decorate with parsley!.

STIFADO (GREEK STEW)

3 lbs!. lean beef, stew meat cut into 1 1/2 inch cubes
Salt and freshly ground black pepper
1/2 c!. butter
2 1/2 lbs!. sm!. onions, peeled
1 can (6 oz!.) tomato paste
1/2 c!. red table wine
2 tbsp!. red wine vinegar
1 tbsp!. brown sugar
1 clove garlic, minced or mashed
1 bay leaf
1 sm!. cinnamon stick
1/2 tsp!. whole cloves
1/4 tsp!. ground cumin
2 tbsp!. currants or raisins, optional

Season meat with salt and pepper!. Melt butter in a Dutch oven or heavy kettle with cover!. Add meat and coat with butter but do not brown!. Arrange onions over meat!. Mix tomato paste, wine, vinegar, sugar and garlic; pour over meat and onions!. Add bay leaf, cinnamon, cloves, cumin and currants!. Cover onions with a plate (to hold them intact)!. Cover kettle and simmer 3 hours or until meat is very tender!. (Do not stir)!. As you serve, stir sauce gently to blend!.

Makes 6 servings!.

With this have sesame bread and a red wine that can hold its own!. Use either a Greek bread with sesame coated crust or a good white bread!.

BEEF BURGUNDY

2 lbs!. lean stew meat
Sm!. onion, chopped
1 can mushrooms
1 c!. beef bouillon or beef cube in hot water
Wine
Salt and pepper

Brown chopped onion in butter!. Add beef and brown on all sides!. Remove meat and discard fat from pan!. Add beef broth and red wine to cover!. Simmer slowly until tender (about 2 1/2 hours)!. May be placed in casserole in 325 degree oven until serving time!. Check liquid often!. Thicken gravy with cornstarch or flour!. Add can of mushrooms while simmering!.

BEEF GOULASH

2 lbs!. stew meat, cubed
2 lg!. green peppers
1 lg!. red pepper
1 lg!. onion, chopped
2 (15 oz!.) cans Hunts tomato sauce
4 pkgs!. McCormick's brown gravy mix
4 c!. water
Salt & pepper
16 oz!. bag wide egg noodles

Boil stew meat for 45 minutes to an hour!. In another pot, mix 2 cans of tomato sauce, 4 packages of brown gravy mix, 4 cups of water, sliced peppers and onions and bring to a boil, stirring frequently!. Add the drained meat, cover and simmer for 2 hours!. Serve over cooked noodles!. Serves 4 to 6 people!.

BEEF STROGANOFF

1 1/2 lbs!. beef stew meat, cubed
2 tbsp butter
1 1/2 c!. beef broth
2 tbsp!. catsup
1 tsp!. salt
1 sm!. clove garlic, finely chopped
8 oz!. mushrooms, sliced
1 med!. onion, chopped
3 tbsp!. flour
1 c!. sour cream

Cook beef in butter in 10 inch skillet over low heat until brown!. Reserve 1/3 cup broth!. Stir in remaining broth, catsup, salt and garlic into skillet!. Heat to boiling, reduce heat!. Cover and simmer until beef is tender, about 1 hour!. Stir in mushrooms and onions!. Cover and simmer until onion is tender!. Mix flour and reserved broth; gradually stir into beef mixture!. Heat to boiling, stirring constantly!. Boil 1 minute; reduce heat!. Stir in sour cream; heat through!. Serve over hot cooked noodles!.

BEER CASSEROLE

4 lb!. good beef stew meat, cubed
1 can beer
1 tbsp!. parsley flakes
2 pkg!. Lipton onion soup mix
1 tsp!. thyme
2 c!. hot water

Brown meat with flour, salt, pepper in Crisco!. Put in large casserole dish with remaining ingredients!.

Bake at 350 degrees for 3 hours!. Serve over rice!.

MINNESTRONE

2 tbsp!. oil
1 lb!. lean beef stew meat, cut into 3/4 inch cubes
1 lg!. onion, chopped
1 1/2 c!. sliced celery
2 cloves garlic, minced
10 c!. water
2 tbsp!. beef flavor instant bouillon
1 sm!. head cabbage, chopped
4 med!. carrots, sliced
15 oz!. can chick peas, undrained

We always butchered our own beef, and so my dad would save some for stew meat or what we call boiled beef!. As long as it's not a lean meat!. Lean stew meat is not a good idea anyway as it dries out to easy!.

Just simmer for a couple of hours, pull out of the broth/water and just eat sprinkled with salt and pepper, b-b-q sauce, or ketchup-mayo-and horseradish mixed!.

Serve with what ever starch and veggies you like!.

Cook up your meat with some spices ( salt, pepper, garlic) and onions and use some beef broth or bouillon and let it cook slowly until well tender than put it over cooked noodles or you could add sour cream to the cooked meat if you feel like something creamy!.
