Do you want a custard filling for pies!?
This is a creme anglaise recipe for the filling
I used it today for a home made crust banana cream pie filling
1 liter 1% milk
3/4 cup sugar or to taste
5 tbsp cornstarch
5 egg yolks-- toss or save whites for something else
2 tbsp unsalted butter
1 tbsp vanilla
Heat milk in a pot with sugar and cornstarch added
Stir almost constantly until the mixture begins to thicken
Remove from heat to add yolks to the milk mixture by first mixing into yolks in a bowl, some of the hot milk mixture, stir it and return yolk mixture back into hot milk mixture on stove and keep heating until thickened more stirring to keep the custard from burning and/or boiling and sticking to the bottom of the pot!.
When very thick and custard-like add butter and vanilla and stir, remove from burner !. Let cool!. place a piece of wax paper on the surface of your custard so that it will not form a hard scum on the top!. Use as a custard for fruit or fruit pies and tarts or just pig out!. It is so DELICIOUS!.
