Do what Jill M said, but instead of grilling for 4 minutes a side, do this!.!.!. Keep the grill on high!. Toss the steak on, 2 minutes flip it, 2 more, flip it again, then again, and one last time!. So you still cook it for 4 minutes a side, but only in 2 minute intervals!. It will cook more evenly, and also the grill won't flare up!. You will love it, trust meWww@FoodAQ@Com

Heat up the charcoal grill, wait until the coal are nice and gray, place your New York Strip with seasoning salt and pepper onto the grill and let it cook to your choice!. For me it is rare!. For my wife and daughters it is medium rare!. Don't place right over heat place off to side of heat a bite!. At this time you can cook your mushrooms and onions at the same time on the grill too!. 4-8 hours before cooking, add a good coating of sea salt and crushed pepper with some olive oil!. Add crushed garlic if you like!.

About an hour before, take the steak out of the fridge and add more salt and pepper!. Preheat your oven to 425!. Put a skillet (cast iron is best) on the oven with some olive oil and heat on med high!. Once the olive oil is just starting to smoke, add the steak and let it sear 3 min on each side!.

The evening before use, smear with minced garlic on both sides, then salt, pepper and wrap it securely and let stand over night!.

Place on bbq grill about 4 minutes per side for medium rare!. You should be able to push on the steak with your finger tips and if it is really soft and gooshy it is rare, if slightly firm it is medium and if it is very firm it is well done!.
