How do you cook fresh green beans?!
A friend picked them from her garden & said something about washing them & taking the string out!? What does that mean!? And how long do I cook them!?Www@FoodAQ@Com
Answers:
Wash the green beans snap off both ends!. The string she is talking about is where you see what looks like a seam on the bean!. Sometimes that can be tough so you just peel it off!. Snap the beans in pieces!. In a Pot brown some chopped bacon!. When bacon is done saute some diced onion in the bacon fat!. Add green beans, put the cooked bacon back in cover with water and season with salt and pepper!. Cook until your desired tenderness!. I like them soft!. I also add new potatoes to my green beans!. I know the bacon is not the healthiest, but it's delicious!.Www@FoodAQ@Com
I snap off the ends, break them in pieces about 3/4 inch long!. In the mean time I have brought a pot of water to a boil and added quartered new potatoes!. When the beans are ready, I drop them into the same water as the potatoes!. Cook until everything is as tender as I want them, drain the water off, add butter!. Return to low heat, stirring occasionally until the butter is melted and potatoes and beans are coated and almost crispy!.

Wash in water with your hands!. Cut off each end!. Sprinkle with 1/8 t!. salt per pound of beans and set aside!.
Melt 2 T each olive oil and butter in a large saute pan!. Add 2 cloves garlic, crushed and finely chopped!. Add beans and reduce toss to coat for 3 minutes over high heat!. Cover and reduce to medium-low heat until your desired level of softness is achieved!. Beans should be bright green and glossy, but not wilted!. Dust lightly with garlic salt before serving!.
My kids & neighbors request these and they are my "go to" dish for every "company" meal!. For holidays I saute an ounce or two of finely chopped proscuitto (cured italian ham like bacon) to add extra richness!.
Yummy!. Now I'm hungry!.Www@FoodAQ@Com
