Quick Cheese Quesadillas
An Easy Lunch or Snack!

2 8-inch flour tortillas
2/3 cup Mexican Cheese Mix
4 Tbls!. salsa



Lightly spray tortillas on one side with vegetable spray!.

Divide cheese and salsa between two tortillas on the unsprayed side!.

Fold in half and place in a George Foreman Grill at 400 degrees F!. for approximately 3 minutes until lightly browned grill marks appear!. Note: Place folded side to bottom of grill to prevent cheese from running out!.

Cut in half and serve!.

Chile-Cheese Quesadillas Ingredients
8 Corn tortillas 1/4 c Fresh cilantro; minced,
1/2 c Shredded Monterey Jack lg Clove garlic; minced
1/2 c Shredded medium-sharp or 3 tb Fresh lime juice
3 tb Canned green chiles; up to 4 2 ts White wine vinegar or
2 tb Olive oil; up to 3 1 Jalape!?o pepper; (more or
2 md Tomatoes; chopped and 1/4 ts Salt
1 sm White onion; finely chopped

Instructions for Chile-Cheese Quesadillas
These might be good at a Superbowl party!. From Texas Cooking Online: For the Quesdillas: Making quesadillas is like making tortilla sandwiches!. Mix together the cheeses and spread equally on four of the tortillas!. Sprinkle the chiles evenly over the cheese!. Top with the remaining tortillas!. If you have a skillet or griddle large enough to accommodate all 4 quesadillas, warm it up and add the oil!. Over medium-high heat, cook the quesadillas 2 minutes or until bottoms are browned!. Carefully turn them over and brown the other side!. Remove from heat and cut each into quarters!. If your skillet is smaller, cook quesadillas one at a time, using 2 teaspoons of oil with each quesadilla!. Serve warm with salsa!. Makes 16 wedges!. For the Salsa: Combine all ingredients in a non-metallic bowl; chill for 1 hour!. Bring to room temperature, stir and drain any excess liquid!. Note: A considerable amount of fat can be removed from quesadillas by using low-fat cheeses!. If fat is of great concern, try using non-stick cooking spray rather than olive oil for cooking!. I use a George Forman grill (so you can obviously use a sandwich press)!. First I get one tortilla, layer it with cheese (I usually just use whatever is in the house at the time :P) and then top with bacon, herbs,pepper and tomato!.!.!. Place another tortilla on top and put in the press until browned and crunchy!. This isn't the most traditional way of making them, but it is a very easy way!.
Other fillings I have had include:
-Chicken, lettuce, mayo and cheese
-Taco-Chicken, cheese and tomato with salsa

1 pkg!. (10 inch) flour tortillas
1 c!. shredded cheddar cheese
1 c!. Monterey Jack cheese, shredded

In large fry pan on low-medium heat, put 1 tortilla laid flat!. Sprinkle cheese over half of tortilla!. When cheese is melted, fold tortilla and continue heating until browned lightly and crisp!. Heat a frying pan on medium heat!. Warm up two tortillas in the pan (one at a time) - takes about a minute on each side!. Grate cheese (I like cheddar the best)!. Put one tortilla in the pan!. Take a tortilla, top it with shredded cheese on one side, maybe green onions (I love those green onions) and fold it over!. Place in a non-stick pan and cook a few minutes on one side, then turn over and brown up the other side until the cheese melts!.Www@FoodAQ@Com
