When you make substitutions, you must first determine why a certain ingredient was specified in a recipe!. The common uses for butter is for flavor and for fat!. Butter has 80% fat, so you must substitute something that is also 80% fat (although a portion CAN be substituted with a fruit puree for the proper consistency and volume)!. Stick margarine is also 80% fat so you can substitute that with no problems!. Notice, I said STICK margarine!. Anything in a tub has air whipped into it, so it will give you less product and more air!. Do not use tub butter, nor tub margarine!. Another thing to remember is not everything we perceive as margarine is margarine!. There are spreads that are less fat!. Examine your *margarine* and make sure it doesn't say spread!. Some will even warn you on the box that it is not to be used for baking!.!.!. for that very reason!.

If you don't have butter, use stick margarine (not tubs and not spreads)!. You can safely substitute a portion with LighterBake fruit puree, or *drained* applesauce!. Say your recipe calls for 1 stick of butter!. You could use 1 whole stick or margarine OR 1/2 a stick of margarine and 1/4 cup of drained applesauce or LightBake Fruit Puree!. You do not substitute equal amounts of fruit for the fat as it will definitely affect the texture of your product!.

tub margarine!. any margarine!. shortening!. or prolly oil but not sure the ratio since butter's solid & oil's liquid--you could look that up!.

Margarine would give the best flavor I imagine!.

also--- I think Applesauce and/or yogurt can be subbed for margarine/butter/or oil in baked goods too!Www@FoodAQ@Com

Regular butter or margarine in the tub!. Or for a healthier option; say it calls for 1 cup of butter!. I use half the butter and 1/2 cup apple sauce!. This works for cakes and cookies!.!.!.it makes them very moist!.Www@FoodAQ@Com
