Okay I am watching Iron Chef?!
It's a re-run but the secrest ingredients was elk!. The challengers said that the way to cook all game is Medium Rare!. The chanllengers even used it in carpachio (sp)!. I grew up where we hunt for our game!. It's a big thing here to make sure you cook your game to just well done, but not over done and dried out because of all kinds of bad things!.
Is this just because our game is WILD game and their's is commercially rasied!. You cannot sell wild game just so everyone knows!. But butcher shops can process and cut it for you!.Www@FoodAQ@Com

I also cook all wild game meat I hunt well done and the game meat that is commercially raised and served in the food service industry including on the food network!. is fed differently than the wild version of the same animal so it can be cooked differently!. The same is true with ground meat if you grind your own beef then it is very safe to eat raw, rare, or medium!. but not if you buy ground beef at the store pre ground for you!.Www@FoodAQ@Com

Game meat usually needs to be prepared to MR because it lacks fat content!. Fat adds a lot of flavor and if you overcook game meats which are super lean most of the time !.!.!.there will be no flavor!. Ostrich and some other games should even be prepared no more than rare!. My own personal opinion is if you cook meats to well done you might as well be a vegetarian because you are missing out on all the flavor a perfectly cooked piece of meat has!.Www@FoodAQ@Com
You didn't exactly ask a question!. I'm with you though, wild-harvested game needs to be cooked well, all the way through!. I'm actually surprised to hear their advice!. I'm not familiar with elk meat, but I can't imagine eating venison that isn't well-cooked and piping hot!. Way too tallowy when it cools!.Www@FoodAQ@Com
There are elk ranches that raise them for food!. It would seem to me there would be no more danger than eating steak tartare!. It is probably even tender like beef, not being forced to forage!.
