Question: Recipes for leftover chicken!?
Have chicken leftover from yesterdays roast!. Has anyone any exciting recipes that I can make for dinner with it!. Usually do a curry, but a bit fed up with it now!. Thanx!Www@FoodAQ@Com


Answers:
Buy some ready-made shortcrust or puff pastry from the supermarket and a tin of condensed mushroom soup (MUST be the thick condensed one) or a large tin of creamed mushrooms!.

Roll out the pastry and line a pie dish, reserving 1/3 pastry for the lid!.

Mix mushroom soup or creamed mushrooms with chicken cut into bitesize chunks or cubes!. Add a handful of frozen peas and/or sweetcorn for colour and extra nutrition!. No need to pre-cook these!.

Fill pie dish and put on lid of pie and brush with beaten egg or milk!. make a small hole in the centre for steam to escape!. Bake in a hot oven (220c) until pastry is golden!. Serve with a green veg like cabbage or spinach, and carrots!.

CHICKEN & SWEET CORN SOUP

Serves 2

INGREDIENTS

1 egg
1 chicken breast (either fresh or leftover from a roast chicken)
1 tablespoon of sunflower oil (if you are using a fresh chicken breast)
200g (? a 400g tin) of creamed sweet corn
1 chicken stock cube
500ml of water
Ground pepper to taste

METHOD

Break the egg into a bowl and pick out any bits of shell!. Mix up the egg!.

If you are using a fresh chicken breast, cut it into thin strips!. Put the oil into a frying pan on a medium heat!. Fry the chicken for about 5 minutes!. Stir frequently to stop it sticking!.

If you are using a leftover chicken breast, tear it into thin strips!.

Put the chicken and sweet corn into a saucepan on a medium heat!. Crumble the stock cube into the water and pour it into the pan!. Mix thoroughly!. Bring to the boil, then turn down the heat until it is just boiling (simmering)!. Continue to cook, stirring as the mixture boils, for about 10 to 15 minutes!.

Slowly pour the egg into the soup, stirring gently all the time to form ‘strings' of cooked egg!. If the soup reaches the desired consistency before you’ve added all of the egg, stop adding the egg!.

Season with the pepper!.

ADDITIONS & ALTERNATIVES

If you want a thick soup, add ? a tablespoon of cornflour mixed with a little water towards the end of the cooking!.

For Creamed Sweet Corn Soup, omit the chicken and substitute a vegetable stock cube for the chicken one!. Www@FoodAQ@Com

Try this!? Make a simple sauce for the leftover chicken and maybe you would like to add it to the pasta or spaghetti or go with smashed potato or French fries, for dinner!.

Another alternative, you may consider putting the sauce and chicken into a pie!?


Chicken Sauce

Ingredients
2 tablespoons butter
1 green pepper (chopped)
1 tablespoon flour
Salt and pepper
Rich milk
Mushrooms (optional)

Action
a!. Heat the butter till bubbles, add green pepper!.
b!. Let cook slowly for 3 minutes!.
c!. Add flour, salt and pepper to taste!.
d!. Add enough milk to make a smooth thickened sauce!.
e!. Add cooked chicken and heat through,
then add mushrooms!.

Pie

Biscuit Ingredients (20 servings)
240g flour
240g cake flour
1 teaspoon salt
2 teaspoons baking powder
5 tablespoons butter
250 ml milk
Preparation
a!. Sift the flour well, and add butter!.
b!. Cutting this lightly into flour!.
c!. Add milk slowly, stirring lightly into fluffy dough!.
d!. Spread on a floured board, and cut very lightly!.

Action
a!. Place the thicken sauce and the chicken in a deep baking dish!.
b!. While piping hot, cover top with fluffy biscuit!.
c!. Bake in preheated 200°C oven, until golden brown!.

Hi Ive also got leftover chicken from yesterday and am making chicken pasta!. First fry a little onion and garlic add some white wine and cream to make a sauce, reduce then add a little bit of really concentrated chicken stock!. You can then add the chicken and cooked pasta and anything else you want!. Believe me this is delicious and its really easy!.Www@FoodAQ@Com

creamed chicken with advocado

Ingredients:



1 lb cooked chicken, cut into strips
2 oz flour
2 oz butter
? pint milk
? pint thin cream
? pint chicken stock
A dash of dry sherry
A dash lemon juice
2 ripe avocados
1 oz grated cheddar cheese
Salt and pepper

First, melt the bitter in the sauce pan, then add the flour and stir into a smooth paste!. Cook for 1 minute, then remove from the heat and stir in the milk, chicken stock and cream!. When the liquid is all mixed in, return to the heat and bring to the boil, stirring continuously!. Do not stop stirring!. Cook on a low heat for 2 minutes, then remove again and add the chicken pieces, a dash of lemon juice and salt and pepper to taste!.


Now, skin the avocados, remove the stones and slice thinly!. Cover the bottom of the casserole dish with the avocado, sprinkle a dash of lemon juice over and add the chicken mixture on top!. Add the grated cheese to the top of that!. Bake in a preheated oven at 400F for 20-25 minutes until the sides start bubbling and the cheese is brown!. Serve hot with a fresh green salad and fresh French bread!.

Bruschetta Chicken Bake
1 can (14-1/2 oz!.) diced tomatoes, undrained
1 pkg!. (6 oz!.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb!. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp!. dried basil leaves
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

PREHEAT oven to 400°F!. Place tomatoes in medium bowl!. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened!. Set aside!.

PLACE chicken in 13x9-inch baking dish; sprinkle with the basil and cheese!. Top with stuffing mixture!.

BAKE 30 min!. or until chicken is cooked through!.

Well, I'd either make chicken mayo sandwiches, or coronation chicken sandwiches or chop it up and make a chicken and mushroom pie or chicken soup!.

Chicken and hummus wraps!! sooooo good!

Take a whole wheat wrap, spread couple tablespoons hummus on there!. Add some left over chicken, avocado slices and a piece of romaine lettuce!.!. and maybe some cucumber spears!. Then drizzle little chili oil, if you like some spicy stuff!.!.!. and oh man, this is SOOOO good!

Stick with the curry idea but use a Thai green curry sauce! I usually serve it with a lime and coriander basmati rice and some stir fried vegetables - absolutely fantastic!Www@FoodAQ@Com
