I love making cheesecakes
One of my favorites is Mini Chocolate cheesecakes
Cheesecakes
9 creme-filled chocolate sandwich cookies or 18 vanilla wafer cookies
2 packages (8 ounces each) plus 1 package (3 ounces) cream cheese, softened
1 cup granulated sugar
1/4 cup unsweetened baking cocoa
2 teaspoons vanilla
3 eggs
Whipped Cream
3/4 cup whipping (heavy) cream
2 tablespoons granulated or powdered sugar
1!. Heat oven to 350F!. Line 18 meduim muffin cups, 2 1/2x1 1/4 inches, with paper baking cups!. Split sandwich cookies in half!. Place 1 cookie half, middle side up, in each cup!. Or place 1 wafer cookie, flat side down, in each cup!.
2!. In large bowl, beat cream cheese with electric mixer on medium speed until smooth!. Gradually beat in 1 cup sugar and the cocoa until fluffy!. Beat in vanilla!. Beat in eggs, one at a time, until well blended!. Divide evenly among cups (cups will be almost full)!.
3!. Bake cheesecakes 20 to 25 minutes or until centers are firm!. Cool 15 minutes (cheesecake centers will sink while cooling)!. Refrigerate in muffin cups at least 1 hour; cover and refrigerate at least 1 hour longer before serving!.
4!. In chilled small bowl, beat all Whipped Cream ingredients with electric mixer on high speed until stiff!. Spoon Whipped Cream on chilled cheesecakes!. Cover and refrigerate any remaining cheesecakes!.

Mini Chocolate Lava Cakes
1 ? cups semisweet chocolate chips
1 stick butter
1/2 teaspoon vanilla extract
1/2 cup sugar
3 tablespoons flour
1/4 teaspoon salt
4 eggs
butter cooking spray
1 tablespoon cocoa powder
8 strawberries, cut into slices- optional
Preheat the oven to 375 degrees F!.
Microwave the chocolate and butter in the bowl for 2-3 minutes or until melted!. Stir in vanilla!.
In a large mixing bowl, combine sugar, flour and salt!. Sift these into the chocolate and mix well with electric hand mixer!. Add eggs one at time, fully incorporating each egg before adding the next!. Beat at high until batter is creamy and lightens in color, approximately 4 minutes!. Chill mixture for at least 2 hours!.
Coat the top and each cup of the muffin tin with cooking spray!. Dust with the cocoa powder and shake out excess!. Spoon mixture into pan using a 4-ounce scoop or ladle!. Bake for 10 to 11 minutes!. Outsides should be cake-like and centers should be gooey!. To remove: flip over tin onto a hard surface covered with wax paper!. Top with strawberries!.
*If serving, melt ? cup of semisweet chocolate chips and then drizzle over muffins; sprinkle with powdered sugar!.Www@FoodAQ@Com

German chocolate cream cheese bars
1 regular box of chocolate cake mix
1/3 cup Honey
1 egg
8 oz pkg cream cheese
2 cups semi-sweet chocolate chips
1 cup chopped nuts
Make cake mix according to directions on package!. Pour batter onto greased and floured 11x17 inch pan or large cookie sheet!. Beat together Honey, egg and cream cheese!. Stir in 1 cup of the chocolate chips!. Drop by spoonful over cake mixture!. Sprinkle remaining chocolate chips and nuts over batter!. Bake at 350 degrees
