GROUND BEEF AU VIN

1/4 c!. finely chopped onion
2 tbsp!. butter
1 lb!. ground beef
1/4 c!. soft bread crumbs
1 sm!. clove garlic, minced
1 egg
1 tsp!. salt
1/4 tsp!. pepper
1/4 tsp!. crushed oregano
5 slices bacon
1/2 lb!. fresh mushrooms, sliced or 1 (3 oz!.) can sliced mushrooms, drained
1 tbsp!. butter
1 (10 1/2 oz!.) can cream of mushroom soup
1/2 c!. red burgundy
3 to 4 c!. hot cooked rice

Heat oven to 350 degrees!. Cook onion in 2 tablespoons butter until tender!. Lift onion with slotted spoon and add to the ground beef in a large mixing bowl!. Brown bread crumbs and garlic in same skillet; add to ground beef mixture!. Add egg and seasonings!. Mix until blended; shape into 1 inch balls!. Fry bacon until crisp; drain on paper towels!. Brown meatballs in small amount of bacon fat and place in 1 1/2 quart casserole!. Cook and stir mushrooms in 1 tablespoon butter!. Blend in soup and burgundy!. Pour over meatballs!. Crumble bacon over top!. Cover; bake 45 minutes!. Serve with rice!. 4 to 6 servings!.

GROUND BEEF AND MACARONI MEDLEY

For 4 servings you will need:

1 lb!. lean ground beef
1 tbsp!. butter
1/2 med!. onion, minced
1 can (1 lb!. 12 oz!.) tomatoes with liquid
1/2 c!. uncooked elbow macaroni
1 pkg!. (10 oz!.) frozen mixed vegetables
1 tsp!. salt
1/2 tsp!. dried oregano leaves
1/2 tsp!. dried basil leaves
1/4 tsp!. pepper
Grated Parmesan cheese
Black olives and dill pickles for garnish

1!. Crumble beef into large skillet with butter!. Over high heat stir until meat is no longer pink!. Add onion, turn heat to low!.

2!. Add tomatoes with liquid and macaroni!. Stir to blend!.

3!. Heat to simmering!. Add mixed vegetables!. Cover and cook until vegetables are done and macaroni is tender, about 20 minutes!.

4!. Sprinkle with salt, oregano, basil and pepper!.

5!. Serve with Parmesan cheese to spoon over individual servings!. Garnish with black olives and pickles, if you like!.

Good served with: A tossed green salad and hot bread or rolls!. For 2 servings: Half of the ingredients!. For 8 servings: Double the ingredients but use the liquid only from 1 1/2 cans of tomatoes!.

2 c!. sliced celery
1/2 c!. sliced onion
1 lb!. ground beef
2 tbsp!. cornstarch
1 1/2 c!. water
1 beef bouillon cube or 1 tsp!. granules
1/4 c!. soy sauce
1/2 tsp!. salt
4 c!. cabbage, chopped
4 c!. cooked rice

Brown ground beef; add onion and celery!. Cook until meat is brown and vegetables are tender!. Blend cornstarch with water!. Stir into beef mixture!. Add bouillon, soy sauce and salt!. Cook until sauce is thickened and clear!. Add cabbage!. Cook, covered, about 5 minutes, until cabbage is crispy!. Makes 6 servings!. Serve on cooked rice!.

GROUND BEEF GOULASH

1 c!. uncooked noodles
1 lb!. ground beef
1/2 lb!. mushrooms
1 c!. chopped onion
1 garlic clove, minced
2 (8 oz!.) cans tomato sauce (low sodium)
3/4 c!. water
1 bay leaf
1 tsp!. oregano
1 tsp!. sugar
1/4 tsp!. pepper

Cook noodles according to directions on package without salt!. Drain!. Cook ground beef with garlic, onion and mushrooms until browned; drain off excess fat!. Add remaining ingredients to ground beef mixture and simmer slowly for 15 minutes!. Add cooked noodles and simmer about 5 minutes!. Remove bay leaf before serving!. Makes 6 servings!.

GROUND BEEF OKRA STEW
For 4 servings you will need:

1 lb!. fresh okra or 2 pkg!. (10 oz!. each) frozen (slightly thawed)
1 lb!. ground beef
1/4 c!. butter
1 onion, chopped
1 clove garlic, minced or pressed, optional
2 c!. chopped canned tomatoes or 4 fresh tomatoes, chopped
2 1/2 c!. water or beef broth
1/4 c!. tomato paste
3 tbsp!. lemon juice
1/4 tsp!. allspice
1/4 tsp!. black pepper
1/4 tsp!. red pepper or 1/4 tsp!. paprika
2 tsp!. salt
1/2 c!. sliced green pepper

1!. Wash fresh okra thoroughly!. Remove caps!. If okra, fresh or frozen, is small, leave whole!. If large, cut crosswise into 1 1/2 inch pieces!. Set aside!.

2!. In large saucepan, saute beef in heated butter until lightly browned!. Add onion and garlic, if used!. Saute 2 to 3 minutes longer!.

3!. Stir in tomatoes, water, tomato paste, lemon juice and seasonings!. Bring to a boil!. Reduce heat!.

4!. Cover and simmer about 15 minutes!. Add the okra and green pepper!. Simmer 20-30 minutes longer or until okra is tender!.

Tips: If you wish, you can substitute cubed round steak for the ground beef!. When buying fresh okra, choose pods that are crisp and not bruised or wilted!.

Good served with: Rice pilaf and almond tart for dessert!. For 2 servings: Half of the ingredients!. For 8 servings: Double the ingredients!.
