its my mums b'day soon and im planning to make a special yet simple dessert that involves some dark chocolate because she loves dark chocolate!. any suggestions!?Www@FoodAQ@Com

*Deep Dark Chocolate Fudge Cake
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water
----Fudge Frosting:----
1 cup cocoa
3/4 cup butter, melted
1/2 cup hot milk
2 teaspoons vanilla
4 cups powdered sugar
Preheat oven to 350F!. Grease and flour three 8 or 9 inch cake rounds!. Combine all cake ingredients, except boiling water, and mix for 2 to 3 minutes until well blended!. Stir in boiling water; batter will be very thin!. Pour batter into prepared pans!. Bake 30 to 35 minutes or until center tests done!. Cool cake for 10 minutes; remove from pans!. Cool completely!. Frost tops of layers and sides with frosting!.
-----Frosting: Add cocoa to melted butter and hot milk in mixing bowl; stir well!. Add vanilla and powdered sugar!. Beat on medium speed until smooth and thickened!. Cool to room temperature!.

*Ghiradelli chocolate comes in 6 ounce bars!. Every two squares = an ounce!., use 60 percent cocoa!.

Ingredients:
6 ? ounces bittersweet (60 percent cocoa) chocolate (Ghiradelli)
12 tablespoons (1 ? sticks) unsalted butter, at room temperature
2/3 cup of sugar
1 2/3 cups (7 ounces) ground sliced almonds (grind in a food processor or blender)
4 large eggs, separated

For the icing:
3 ? ounces bittersweet (60 percent cocoa) chocolate (Ghiradelli)
3 tablespoons unsalted butter

Method:
Heat the oven to 300°F!. Line a 10-inch spring-form pan with parchment paper (not wax paper)!. Chop the chocolate into small pieces and melt it in a heatproof bowl over a saucepan of simmering water (or use a double boiler if you have one)!. Remove from the heat and cool until tepid!. Cream together the butter and sugar until soft and creamy using an electric mixer!. Add the ground almonds, egg yolks, and melted chocolate, and beat until evenly blended!. Whisk the egg whites until stiff, add to the cake mixture, and quickly fold in until evenly mixed using a rubber spatula!. Pour into the prepared pan and bake for 35 minutes!. A light crust will form on the top and the middle should still be a little squishy!. Leave to cool a little before carefully removing the sides!. Cool on a wire rack!. Slide a long knife under the cake to release it from the parchment, but leave the cake on the paper!.

For the icing:
Melt the chocolate and butter in a heatproof bowl over a saucepan of simmering water!. Spread evenly over the top of the cake and leave to set!.

Chocolate Marble Cake

Cake Ingredients
250g light cream cheese
150g sugar
180g sour cream
4 teaspoons flour (sifted)
2 teaspoons vanilla
2 large eggs
50g dark chocolate (melted)

Crust Ingredients
Crumbs (from 10 pieces of chocolate biscuits)
8 teaspoons melted butter (unsalted)

Preparation
a!. Preheat oven to 160°C!.
b!. Line a 20-cm spring-form with a non-stick baking paper,
and coat the paper with vegetable oil!.
c!. In a bowl, combine crumbs and butter and mix well!.
d!. Press over the bottom of a baking pan and 2-cm up sides!.
e!. Wrap outside of the pan with foil!.

Action
a!. In a large bowl, beat cream cheese and sugar for 2 minutes!.
b!. Beat in sour cream, flour and vanilla!.
c!. Add eggs, one at a time!.
d!. Beat well after each section!.
e!. Transfer 1/2 of the mixture to a clean bowl!.
f!. Stir in chocolate!.
g!. Spread half the vanilla mixture over crust!.
h!. Top with half of the chocolate mixture!.
i!. Spoon remaining vanilla mixture over the chocolate mixture!.
j!. Top the last layer with the remaining chocolate mixture!.
k!. Use a fork, gently stir the mixture together!.
l!. Set the dish in a roasting pan and add boiling water to come,
half way up sides of the baking pan!.
m!. Bake about 60-75 minutes, till the cake is set!.
n!. Place dish on the rack and cool to room temperature!.
o!. Cover and chill for 4 hours!.

Make a brownie and put melted dark chocolate on it!. Put this on a large white plate with no design on it!. And then make a nice pattern with the leftover dark chocolate around it!. Then put very little whipped cream on top!. After that, put half a strawberry on top!. It's easy to make, and it will look ah-mazing!Www@FoodAQ@Com
