This may not be the exact recipe you're looking for, but if you want restaurant-quality, you definitely would want to use a classic buttercream frosting for cupcakes!
Ingredients:
4 large eggs
1 cup sugar
2 tsp!. vanilla (extract, not flavoring - very important!)
1/2 tsp (pinch) salt
1 lb!. butter (not margarine!)
You'll need a hand mixer, a double-boiler, and a candy thermometer!. If you don't have one of those, improvise with whisks and a metal mixing bowl over a pan of boiling water!.
- Cut room-temp butter into small pieces (around 20)!. Start water for boiler!.
- Mix eggs, sugar, vanilla and salt in top pan of double boiler on medium speed until mixture reaches about 150 degrees!.
- Turn mixer down to low, incorporate butter one piece at a time!.
- Continue mixing until you get a soft, silky texture!. Let cool a bit, then frost away!
If my memory serves me right, this recipe works for 2 round cakes or 24-30 cupcakes!. Store the leftover icing in the fridge!. Enjoy!Www@FoodAQ@Com
