Question: Can you help me find a eggless recipe!?
I need a recipe for cookies, breads, etc!. anything for dessert that can be be given as a gift!.

It CAN NOT include eggs, and I would like for it to include coffee granules!.

I bake everything without eggs!. It is quite easy!. You can just take any of your favorite cookie recipes and bake them without eggs!. It will still turn out delicious!. You can substitute the egg with a bit of cornstarch and a tiny bit of water!.
Date bars are also good and require no eggs!.

Coffee Shortbread Cream Cookies!.

Ingredients!.
1/2 cup of plain flour
1/2 cup of SR flour
2 tablespoons of cornflour
100g unsalted butter (about 3 1/2 tblspns) chopped or softened
2tblspns of soft brown sugar
1 teaspoon of instant coffee

Cream Filling
60g unsalted butter(2 tblspns)
1/3 cup icing sugar mix
1 tspn instant coffee powder

Heat oven to 180 c!. line two biscuit trays with baking paper
Place flours,butter & sugar in a food processor & blend for 30 seconds or until it forms a smooth dough!.
Turn onto a floured board & knead for a minute!. Form small balls of the mixture, then place on tray & press lightly with a fork to flatten slighly!.
Bake for 15 mins until just golden brown!. Place on wire cooling rack to cool completely before adding filling!.
Filling,!.Dissolve the coffee in 1teaspoon of boiling water!. Using electric beaters beat butter!. Coffee & icing sugar until light & creamy!. Sandwich between the biscuits!.

Shortbread

1 Cup butter, room temp
1/2 Cup powdered sugar
3 C All Purpose flour
1 tsp vanilla
pinch salt

Whisk dry ingredients well!. Beat butter and vanilla until fluffy!. Add dry ingredients to butter!. Mix just until combined!. Press or roll out to about 3/8" thick, and cut into small squares or use simple cookie cutter!. Prick a few holes in each, or use the tines of a fork!. Place on parchment paper!. Dust tops w/ a bit of granulated sugar to make them sparkle!. Bake at 325oF for approx!. 15 mins or til golden brown!. about 3 dz!. Cool on racks; store room temp in airtight container!.

Chocolate Pudding Cake

This makes a nice cake layer that magically floats atop a layer of warm, fudge pudding!

3/4 cup granulated sugar
1 cup plain flour
1/4 teaspoon salt
2 teaspoons of baking powder
2 Tablespoons cocoa
? cup milk
1 teaspoon of vanilla
3 Tablespoons melted, cooled, margarine
1/2 tsp!. instant coffee granules, optional* (give a richer chocolate flavor)

Sift sugar, flour, salt, baking powder and cocoa together in bowl!. Stir in milk, margarine, vanilla, and coffee granules!. Batter will look like brownie batter!. Spread batter into greased baking dish (Pyrex bowl or 9”x13” dish)!.

TOPPING:
? cup of granulated sugar
? cup brown sugar
1/4 cup cocoa

Mix topping sugars and cocoa together and sprinkle dry ingredients over batter!. Pour 1 ? cups of tap water over all!. DO NOT STIR!.

Place in oven and bake at 350oF for 45 minutes or until topping is done!. (In the baking process, ingredients will reverse themselves - finished product will look like a brownie on top and have chocolate pudding on bottom!.)

Serve in bowls with spoons!. Serves 6-8 people!. Good with vanilla ice cream or cool whip!.

Buttermilk Oat Rolls
*(skip egg wash, just use melted butter to make oats stick to exterior)

3/4 cup regular oats
1/2 cup boiling water
1 tablespoon sugar
1 package dry yeast (about 2 1/4 teaspoons)
1 1/2 teaspoons sugar
1/4 cup warm water (105° to 115°)
2 1/4 cups bread or all-purpose flour, divided
1/4 cup low-fat buttermilk
1 tablespoon stick margarine or butter, melted
3/4 teaspoon salt
Cooking spray
1 tablespoon water
1 large egg white, lightly beaten
1 tablespoon regular oats

Combine first 3 ingredients in a small bowl, stirring until well-blended!. Let stand 5 minutes!.
Dissolve yeast and 1 1/2 teaspoons sugar in warm water in a large bowl; let stand 5 minutes!. Lightly spoon flour into dry measuring cups; level with a knife!. Add oat mixture, 1 3/4 cups flour, buttermilk, margarine, and salt to yeast mixture, stirring to form a soft dough!. Turn dough out onto a lightly floured surface!. Knead until smooth and elastic (about 8 minutes); add enough of remaining flour, 1 tablespoon at a time, to prevent dough from sticking to hands!. (Dough will be slightly sticky)!.

Place dough in a large bowl coated with cooking spray, turning to coat top!. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in bulk!. Punch dough down; cover and let rest 5 minutes!. Divide dough into 12 equal portions!. Working with 1 portion at a time (cover remaining dough to keep from drying), shape each into a ball!. Place balls in a 9-inch square baking pan coated with cooking spray!. Cover and let rise 30 minutes or until doubled in bulk!.

Preheat oven to 375°F!. Uncover the dough!. Combine 1 tablespoon water and egg white; brush over dough!. Sprinkle dough with 1 tablespoon oats!. Bake at 375° for 25 minutes or until lightly browned!. Serve warm!.

Yield: 1 dozen (serving size: 1 roll)
