Serve it warm, it's best that way!.
It's actually really easy to make, the trick is not to let it get too hot since eggs will coagulate at 65'C and then it will curdle!.
INGREDIENTS
3 Egg yolks
5 Tbsp Cold water
? Lemon, juice of
Salt
Cayenne pepper
250g Unsalted butter, melted
METHOD
1!. Put the egg yolks, water and lemon juice into a cold pan with the seasoning!. Beat well!.
2!. Slowly pour in the diced butter and place over a moderate heat whilst whisking until thick!.
3!. I usually finish it off with a drop of water!.

Warm but I would advise you to make it yourself, the bought kind is DISGUSTING!. It has to be warm, not hot as it will curdle if too hot, and it can't be cold as the high butter content makes it go solid!. Making it is a bit like making mayo!. To make it you need an egg yolk, a teaspoon of wine vinegar and a couple of ounces of melted butter!. Mix the egg yolk and vinegar in a bowl over a pan of hot water (not boiling) and add the melted butter a few drops at a time, like mayonnaise, till it's all in!. Stir till it thickens Pinch of salt and it's done!. Don't let it get too hot or you will scramble the egg yolk, not nice!. and serve immediately!. Warm!. If you are going to buy a pre-made hallandaise sauce though I would highly reccomend the powder stuff over the botttled!. It is found in the gravy and other powdered sauces section!.

1 cup of Good quality Mayonaise!. Not the salad cream or salad dressing!.
1 teaspoon of melted butter!.
juice of half a lemon
Fresh ground white pepper to taste
drop or two of hot pepper sauce!.
