Jon's Guinness and Vermont Maple Marinade

1 can Guinness extra stout
1 cup maple syrup -- c grade
2 sprigs fresh herbs -- crushed
2 bay leaf -- crushed
1 tablespoon crushed black peppercorns

Combine ingredients!.
Marinate protein 1 to 24 hours!.
Season with salt and grill!.
If you marinade 24 to 36 hours you will need no sauce!.

Coconut Curry Chicken Skewers

1 pound chicken breast or thighs cut into bite-size pieces
1 Tbs!. curry powder
1/2 Tbs!. pepper
1 Tbs!. low sodium soy sauce
1 Tbs!. sugar
1 Tbs!. garlic powder
1/4 cup light coconut milk
8 to 10 bamboo skewers


Combine all ingredients in a bowl!.
Marinate chicken for four to 24 hours!.
Thread on a bamboo skewer
If chicken is thick, pound slightly with mallet or side of a knife!.
Drain and cook on hot grill

Healthy BBQ Marinade/Sauce

12 ounce no salt added tomato paste
3 ounces low sodium soy sauce
1/2 c!. dry white wine (to replace salt taste)
1 tbsp!. dry mustard or dijon
2 tbsp!. red wine vinegar
1 tbsp!. Worcestershire sauce
Dash Tabasco (to taste)
1/4 c!. honey
1 tbsp!. mild chili powder
Juice of 1/2 orange
1 1/2 c!. water
2 tsp!. Liquid Smoke


Mix Ingredients
Simmer for about 20-30 minutes
Reserve for Marinade or Mopping Sauce

FAVORITE BEEF

3/4 c!. low-sodium soy sauce
4 oz!. dry white wine
2 tbsp!. low-sodium Worcestershire sauce
1 tbsp!. coarsely ground black pepper
1 tbsp!. low-sodium tomato paste
1 tsp!. ground paprika
1/2 tsp!. ground cardamom
1/2 tsp!. garlic powder
1 (2 lb!. 13 oz!.) boneless lean eye round

1!. To prepare marinade, in gallon-size sealable plastic bag, combine all ingredients except beef until blended!. Add beef; seal bag, squeezing out air; turn to coat well!. Refrigerate at least 8 hours or overnight, turning bag over occasionally!.
2!. Preheat broiler!. Remove beef from bag; reserve marinade!. Place beef on rack; broil 2 minutes on each side!.

3!. Preheat oven to 350 F!. Place beef in large Dutch oven; pour reserved marinade over beef!. Cover and bake 1 1/4 - 1 1/2 hours or until done to taste, basting occasionally!.

4!. Remove roast to platter; let stand 10 minutes before carving!. Skim any fat from marinade and pour into small bowl!. Carve roast and pass marinade separately!.

ORIENTAL GRILLED CHICKEN

2 tbsp!. acceptable vegetable oil
1/4 c!. honey
3 tbsp!. red wine vinegar
1/4 c!. low-sodium soy sauce
1 clove garlic, minced
2 tbsp!. finely chopped fresh parsley
2 tsp!. grated fresh ginger or 1 tsp!. ginger powder
1/2 tsp!. freshly ground black pepper
12 pieces chicken, about 3 1/2 to 4 lbs!., skinned, all visible fat removed

In a bowl, combine all marinade ingredients and mix well!. Add chicken and turn to coat all pieces!. Cover and refrigerate for at least 2 hours, turning occasionally!.
Grilling method: Grill chicken pieces 6 inches away from white-hot coals!. Grill 30 to 45 minutes, brushing pieces with marinade and turning pieces frequently, until chicken is tender but not dry!.

Broiler method: Preheat broiler!. Arrange chicken pieces on baking sheet and place 5 inches away from the heat!. Broil 25 to 30 minutes, brushing pieces with marinade and turning frequently, until chicken is tender but not dry!.

Makes 6 servings (2 pieces of chicken per serving); 286 calories per serving!.

LOW-FAT CHICKEN

1 tbsp!. olive oil
1/4 c!. red wine vinegar
2 tsp!. low sodium soy sauce
2 tsp!. Dijon-style mustard
Black pepper to taste
1 tbsp!. brown sugar
4 chicken breasts, skinned and boned

Combine first 6 ingredients in saucepan!. Bring to boil and cool!. Put chicken in ziploc bag!. Pour marinade over and refrigerate for at least 4 hours!. Cook under broiler for 4 minutes each side!. Baste with remaining marinade!.Www@FoodAQ@Com

I used to marinade 10 chicken wings
with only 2 teaspoons of ginger (minced), 3 tablespoons oyster sauce and some garlic powder!.

You can use low salt soy sauce or chili sauce or a teaspoon of sugar plus soy sauce, to replace oyster sauce!.

When you want to enhance the salt taste without adding salt, you may add a few drops of lemon juice!.

Poultry Marinade (per pound):
2 Tbsp Reduced Sodium Soy Sauce; 4 cloves minced garlic; 1 Tbsp Olive Oil; 1 Tbsp Balsalmic Vinegar!.

Red Meat Marinade:
1/4 C Diet Coke; 2 Tbsp Reduced Sodium Soy Sauce; 1 Tbsp liquid smoke; 1 t each of garlic powder, onion powder!.

Tenderizing Marinade (per pound) for rough cuts of beef:
