Question: How can I make sure my chicken doesn't dry out!?
This weekend I cooked a skinless, white chicken breast in butter, lemon juice, rosemary, salt and pepper!. It came out okay, but kind of dry!. Any suggestions!?Www@FoodAQ@Com

Personally, I would skip the lemon juice until the end (one spray before eating)

And to ensure moist chicken, I would baste the chicken (before, once during cooking and right before serving) with a chicken broth in water!. (you can buy chicken broth in a can or the powder form and add water)!.
You can also use this to baste a Thanksgiving turkey!. It's a low fat, moistening agent that you can use instead of butter, oil or other fats!.Www@FoodAQ@Com

Don't overcook it!. Boneless breasts cook fast and since they have no fat, dry out quick!. I cook them in parchment in the oven that stops them from drying out too much!. also a little olive oil is good for you and helps the chicken breast!.

All the ingredients you like - fresh rosemary, lemon juice and a couple of lemon slices, olive oil instead of butter, salt and pepper!. Rub the breasts with the salt, pepper and olive oil!. Place in the parchment, put the lemon slices, rosemary sprig and sprinkle the lemon on it all!.

Wrap the breasts and herbs in the parchment paper, place on a cookie pan and place in a hot oven!. This steams the breast without all the juice dripping away and leaves the breast tender!. also don't poke them while they are cooking!.

if you soak your chicken in a brine first it will come out juicy and delicious!. mix 2 cups of warm water with 1 cup each salt and sugar!. stir to dissolve!. add one cup of ice cubes to the water to bring the temperture down and add your chicken!. soak for as little as 2 hours or as long as overnight, overnight is best!. when you are ready to cook them, rinse them in cold water and pat dry with paper towels!. cook as you normally would and enjoy!.Www@FoodAQ@Com

Beer seems to make chicken come out juicest for me (I love a good Beer butt Chicken) But if you would like to make what you already got moist you can put the already made Chicken Breast on a frying pan, add some water and put a lid over it!. That's what a lot of restruants do so they can cook the chicken ahead of time!. it always turns out good!.Www@FoodAQ@Com

wash breast, dip in seasoned flour, egg wash, and flavored bread crumbs, saute lighty in olive oil!. If you use butter, use the oil also, butter has a smoking pt lower than the oil!.

marinate it for a couple hours before you cook it!.

try beer, or even apple juice!. i just tried some chicken last night that was marinated in apple juice and it was amazingWww@FoodAQ@Com

Next time use a little olive oil with the butter!. Butter alone won't give the chicken breast enough moisture!. Brown on both sides then cover tightly to keep the moisture in!.Www@FoodAQ@Com
