good shake of Worcestershire sauce
1 beef stock cube

2x400g can red kidney beans, drained
1 large bunch coriander leaves, roughly chopped
wedges of lime, to serve

Method
1!. Heat the oil in a large, heavy-based saucepan and fry the onion and garlic until softened!. Increase the heat and add the mince, cooking quickly until browned and breaking down any chunks of meat with a wooden spoon!. Pour in the red wine and boil for 2-3 minutes!. While waiting, pour a glass for yourself!.
2!. Stir in the tinned tomatoes, tomato purée, fresh chilli or chilli flakes, cumin, ground coriander, cinnamon, and Worcestershire sauce and crumble in the stock cube!. Season well with salt and pepper!. Bring to a simmer, cover with a lid and cook over a gentle heat for about 50 minutes to 1 hour, stirring occasionally until the mixture is rich and thickened!. Add the kidney beans and fresh coriander!. Cook for a further 10 minutes, uncovered, before removing from the heat, adding any extra seasoning if necessary!. This is ideal served with the lime wedges and also rice, crusty bread or jacket potatoes, guacamole, sour cream and a big green salad!.Www@FoodAQ@Com

Tips:
The chilli is much tastier a day or two after it's cooked as the flavours develop and the texture becomes richer!. Simply leave to cool, stick in the fridge and gently heat before serving!. If you're eating the chilli on the day you prepared it, any leftovers can be frozen in individual portions in well-sealed sandwich bags, then reheated by boiling from frozen in a saucepan of water for about 15-20 minutes until steaming hot!.

Beef Chili Recipe (Chili Con Carne)

This is a very tasty beef chili recipe!.

2 Tbsp!. Vegetable Oil
2 Onions, chopped
2 Garlic Cloves, smashed and chopped
1 Yellow Pepper, chopped
1 1/2 lbs!. Lean Ground Beef
1/2 tsp!. Caraway Seeds
1/2 tsp!. Celery Seeds
1 (19 oz!.) can Red Kidney Beans, drained
1 1/2 cups Stewed Tomatoes
1 1/4 cups Beef Stock, heated
4 Tbsp!. Tomato Paste
Pinch Cayenne
Pinch Paprika
Red Peppers, a few crushed
Salt and Pepper
Pinch Sugar
Preheat oven to 350 degrees F!.

Directions:
Heat oil in large, deep skillet!. Add onions, garlic, and yellow pepper and cook 7 to 8 minutes over medium heat!.

Stir in meat and season!. Add all seasonings and mix very well!. Cook 5 to 6 minutes over medium heat!.

Stir in kidney beans and continue cooking 4 to 5 minutes!.

Add tomatoes and sugar and cook 2 to 3 minutes!. Stir in beef stock and tomato paste with the correct seasoning!. Bring to boil!.

Cover pan and cook 45 minutes in oven!. Serve chili with fresh bread if desired!.

Onions - 1 big one
Minced Beef - 500g
Kidney Beans - 1 tin
Chilli - to taste
Tomatoes - a couple of tins

Easy directions:
Fry up the onions until soft, chuck in the mince and brown it off!. Chuck in the tomatoes and simmer for a while!.

Add Chilli powder to taste!. Add the kidney beans (Making sure that they've been prepped properly)!.

Let it simmer for a long time; minimum an hour!.
