Question: I need some recipes to make with apples!?
OK I took the family to an Apple orchard and now we have tons of apples, what can I make besides apple pie and apple sauce with them, any good recipes will be appreciated, also I have a 5 year old and a 12 year old so kid friendly if you have any!.!.Www@FoodAQ@Com

2 granny smith apples, peeled, quartered and cored
1 can refrigerated croissant rolls
1/2 cup sugar
1/2 tsp cinnamon
1 stick butter, sliced
3/4 cup Mountain Dew, 7-Up or Sprite

Spray 9 X 12" pyrex dish with Pam!. Wrap each apple with a triangle of
crescent roll dough, stretching if needed to cover!. Lay each bundle in
pan!. Mix sugar and cinnamon, sprinkle over bundles!. Top with slices of
butter!. Pour soda over all!.

Bake at 350 degrees for 45 minutes!. Serve warm with vanilla ice cream
or whipped cream!. Be careful, they are boiling hot when they come out
of the oven!. Ladle the sauce over the ice cream when serving!.

Makes 8 bundles, serves 4-6 people!.







Cracker Barrel Old Country Store Fried Apples
6 large tart green Granny Smith apples
1 teaspoon lemon juice
1/4 cup bacon drippings
1/4 cup brown sugar
1/8 teaspoon salt
1 teaspoon ground cinnamon
Dash of ground nutmeg

In a large skillet, melt bacon drippings!. Pour apples evenly into the skillet!. Sprinkle with lemon juice, brown sugar and salt!. Cover and cook over low heat for 15 minutes, until apples are tender and juicy!. Sprinkle with cinnamon and nutmeg!.







Deluxe Caramel Apples

4 wooden ice cream bar sticks
4 large Red Delicious apples (about 8 oz!. each), chilled
1-1/2 cups pecans (6 oz), toasted and finely chopped
8 oz!. individually wrapped caramels (30 to 50 candies, depending on
brand)
4 oz!. semisweet chocolate (or chips), chopped (3/4 cup)
4 oz!. white chocolate baking bar (or chips), chopped (3/4 cup)

Insert an ice cream bar stick into stem end of each apple!. Place
pecans on 12" long sheet of waxed paper!. Line cookie sheet with
waxed paper!. In 1-quart saucepan, melt caramels with 2 Tbs!. water
over low heat, stirring frequently!. Remove saucepan from heat!.
Holding 1 apple by stick, dip into caramel mixture, spooning caramel
over apple to coat completely!. (If caramel mixture in saucepan
begins to harden, warm over low heat to soften)!. Roll caramel-coated
apples in pecans, pressing pecans lightly into caramel!. Transfer
apple to prepared cookie sheet; refrigerate about 15 minutes to allow
caramel to set!. Repeat with remaining apples, caramel, and pecans!.

In small microwave-safe bowl, place semisweet chocolate; in another
small microwave-safe bowl, place white chocolate!. Place both bowls
in micrwave oven and cook on medium (50% power) about 1 minute or
until chocolates melt; stir until smooth!. With fork, drizzle white
chocolate lengthwise on apples over nuts!. With clean fork, drizzle
semisweet chocolate on apples, making sure not to cover too much of
white chocolate!. Return apples to cookie sheet; drizzle with any
remaining chocolate!. Refrigerate apples 15 minutes to allow
chocolate to set!. If not eating right away, loosely cover apples and
refrigerate up to 2 days!. Let apples stand at room temperature 15
minutes to soften caramel before eating!. Cut apples into wedges to
serve!.







Buttery Cinnamon Skillet Apples


4 medium unpeeled cooking apples,
cored and cut in half
1/3 cup butter
1/2 to 3/4 cup granulated sugar
2 tablespoons cornstarch
1 1/2 cups water
1/4 to 1/2 teaspoon cinnamon

in a skillet, melt butter over medium heat!. Stir in sugar and cornstarch, mixing well!. Add remaining ingredients and cover and cook over medium heat, spooning sauce over apples, until fork tender and sauce is thickened, about 12 to 15 minutes!.

Makes 4 servings







Apple Fritters

APPLES
2 apples (tart and firm) -- peeled, cored and sliced into 1/4" rings
1/2 tablespoon applejack or brandy
2 to 3 teaspoons lemon juice (depending on tartness of apples)

BATTER
1 egg
1 tablespoon granulated sugar
1/2 teaspoon grated lemon zest
1/2 tablespoon applejack or brandy
1/4 cup buttermilk -- room temperature
1/2 tablespoon butter -- melted and cooled
1/2 cup white flour
1/4 teaspoon baking soda
1/4 teaspoon salt
Oil -- for frying
Powdered sugar -- for dusting

In a large bowl, toss apples with applejack or brandy and lemon juice!. Let
stand 1 hour at room temperature!.

For the batter, whisk egg, sugar, and lemon zest in a small mixing bowl
until it lightens in color and forms a ribbon when trailed from beaters!.
Beat in applejack or brandy and then buttermilk and butter!.

Sift flour with baking soda and salt!. Fold into buttermilk mixture until
smooth!. If batter is too thick, add 1 to 2 more teaspoons buttermilk!.

Heat about 2 inches of oil in a deep fryer to about 375oF!.

Drain apple slices and pat dry!. Dip slices, 1 or 2 at a time, into batter to
coat completely!. Let excess batter drip back into the bowl!. Lower apple
slices, 1 or 2 at a time, into the hot oil and fry until bottom of each
slice is deep golden brown and coating is puffed, 2 to 3 minutes!. Carefully
turn slices and fry until evenly golden brown, 2 to 3 minutes each!.

Autumn Apple Salad


INGREDIENTS (Nutrition)

* 1 (20 ounce) can crushed pineapple with juice
* 2/3 cup white sugar
* 1 (3 ounce) package lemon flavored gelatin mix
* 1 (8 ounce) package cream cheese, softened
* 1 cup diced, unpeeled apples
* 1 cup chopped nuts
* 1 cup chopped celery
* 1 cup frozen whipped topping, thawed


DIRECTIONS


1!. In a medium saucepan over medium heat, boil the pineapple and sugar 3 minutes!. Mix in the lemon gelatin mix, stirring until dissolved!. Stir in the cream cheese!. Remove from heat and allow to cool 10 to 15 minutes!.

2!. Gently fold the apples, nuts, celery and whipped topping into the mixture!. Transfer to a 9x9 inch square pan!. Refrigerate 4 hours, or until firm!.

This is yummy and easier than the traditional baked apple

6 apples - peeled, cored and sliced
1/2 cup white sugar
3 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup whole milk


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Grease a 2 quart casserole dish, or coat with non-stick cooking spray!.
Place apples in a large bowl!. In a small bowl, mix together sugar, flour, cinnamon, nutmeg and cloves!. Stir spice mixture into apples until evenly distributed!. Fold in raisins and walnuts!. Spoon into prepared dish!. Pour milk evenly over apple mixture!.
Bake in preheated oven for 45 to 60 minutes, or until soft and bubbly!. Allow to cool slightly before serving!.

nonstick cooking spray
1/2 cup evaporated milk
1/3 cup all-purpose baking mix
2 tablespoons granulated sugar
3 large eggs
2 tablespoons orange juice
1/4 teaspoon ground cinnamon
1 medium apple
1 tablespoon cinnamon sugar


DIRECTIONS
PREHEAT oven to 375 degrees F!. Spray 10-inch ovenproof skillet lightly with nonstick cooking spray!. Place in oven for 10 minutes!.
PLACE evaporated milk, baking mix, 1 tablespoon sugar, egg yolks, orange juice and cinnamon in blender; blend until smooth!. Beat egg whites in large mixer bowl until soft peaks form; gradually add remaining sugar!. Beat until stiff peaks form!. Fold milk mixture into egg whites!.
POUR batter into hot skillet!. Gently push each apple slice about 1/2 inch into batter, peel side up, to form a spoke-like pattern around batter!. Sprinkle with cinnamon-sugar!. Bake for 10 to 15 minutes or until set!. Serve immediately!.

2 large baking apples, peeled, cored
1 1/2 cups Pillsbury BEST(R) All Purpose, Unbleached or Self Rising Flour*
1/2 teaspoon salt
1/2 cup shortening
4 tablespoons cold water, or as needed

1/4 cup margarine or butter, melted
1/2 cup sugar
1 teaspoon cinnamon

Heat oven to 425 degrees F!. Cut each apple into 8 wedges!. Lightly spoon flour into measuring cup; level off!. In medium bowl, blend flour and salt!. With pastry blender or fork, cut in shortening until mixture resembles coarse crumbs!. Sprinkle flour mixture with water 1 tablespoon at a time, mixing lightly with fork until dough is just moist enough to hold together!. Shape dough into ball!.
On floured surface, roll dough lightly from center to edge into 12-inch square!. Spread with 1 tablespoon softened margarine!. Fold 2 sides to center!. Roll to 16x10-inch rectangle!. Cut crosswise into 16 (10-inch) strips!. Wrap 1 strip around each apple wedge!. Place 1/2 inch apart in ungreased 13x9-inch pan!.
Brush each wrapped apple wedge with melted margarine!. In small bowl, blend sugar and cinnamon; sprinkle over wrapped apples!.
Bake at 425 degrees F for 20 minutes!. Pour water into pan!. Bake an additional 12 to 17 minutes or until golden brown!. Spoon sauce in pan over twists!. Serve warm or cool, plain or with whipped cream!.

2/3 cup vegetable shortening
1/2 cup sugar

1/3 cup milk

Cream Cheese Frosting
In large bowl with electric mixer, beat together 1 3-ounce package cream cheese and 1/4 cup softened butter or margarine!. Add 1 teaspoon grated orange peel and 1/2 teaspoon vanilla extract!. Beat in 2 cups confectioners' sugar until smooth!.


Method:

1) Heat oven to 350 degrees F!. Grease a 15- by 10-inch jelly roll pan!. In large bowl, with electric mixer, beat together shortening and sugar until light in texture-about 3 minutes!. Add egg and beat well!. Add molasses and milk, beating until well combined!.

2) In small bowl, combine flour, bran, baking soda, and salt!. Add flour mixture to shortening mixture, beating on low speed just until combined!. Spread batter in prepared pan and bake 25 to 30 minutes or until cake tester inserted in center comes out clean!. Cool in pan!.

3) Meanwhile, prepare Cream Cheese Frosting, if desired!. When bar mixture has cooled, spread with Cream Cheese Frosting; cut into 24 bars and serve!.

APPLE PIZZA

Pastry Crust:
250mL flour
2mL salt
75mL shortening
35mL cold water

1!. Sift and measure flour into a medium sized bowl!. Stir in salt!.
2!. Cut in shortening with a pastry blender until mixture resembles coarse crumbs!.
3!. Gradually add water, tossing the mixture gently with a fork until a soft ball forms!. Knead 8-10 times!. Form a dough ball!.
4!. Place dough into a plastic bag and seal well!. Allow to rest in the refrigerator!.

Topping A:
1 large apple
30mL sugar
2mL cinnamon

1!. Sprinkle clean surface with flour!. Roll out dough to a thin layer (5mm)!. Place on small pizza pan!.
2!. Peel, core and slice apple!. Arrange neatly on crust!.
3!. Combine sugar and cinnamon and sprinkle over apples!.

Topping B:
90mL flour
30mL sugar
30mL margarine

1!. Sift together flour and sugar!.
2!. Cut in margarine with pastry blender until mixture is crumbly!.
3!. Sprinkle topping B over topping A!.

Baked apples are fast, especially in the microwave!. Core them, put a little butter, brown sugar, cinnamon, raisins into the hole, and place in a dish!. Add just a few teaspoons of water to the dish, then bake or microwave until soft!. Let them cool a bit before eating as the liquid in the middle can get pretty hot!.
Yum with ice cream or table cream on top!

If you are energetic and have heaps you can make apple butter to store in jars like jam, but takes a long time and is pretty labor intensive (google for that recipe!)Www@FoodAQ@Com

slice apples and sweet onions, (like a walla-walla), cook them down to a carmelized state!.!.!.not mushy, and serve them on puff pastry, or stuff mixture in phyllo, sprinkle with goat cheese, or blue cheese!. probably not kid friendly, but one of my favorite treats!.

Apple Fritters

1 cup all-purpose flour

1 cup cold beer (not dark) or lemon-lime soda
10 cups vegetable oil
2 apples (1 pound), peeled, halved lengthwise, cored, and sliced 1/4-inch thick
Confectioners' sugar, for dusting

Stir together flour, granulated sugar, and salt, then add beer, and whisk to combine!. Heat oil in a 5-quart heavy pot until the thermometer registers 375 degrees F!.
Dip apple slices in batter, shaking off excess, and fry, about 8 at a time, until golden, about 1 1/2 minutes on each side!. Transfer fritters with a slotted spoon to paper towels to drain!. Serve warm, dusted with confectioners' sugar!.

Pecan-and-Dried Fruit Baked Apples

1/4 cup chopped pecans
6 large Gala or Rome apples, cored
1 tablespoon lemon juice
2 tablespoons butter, softened and divided
1/2 cup raisins
1/4 cup dried cranberries
1/4 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup apple cider
1/4 teaspoon vanilla extract
2 tablespoons rum (optional)
Garnishes: whipped cream, toasted pecans

Place pecans on a baking sheet, and bake at 350° for 12 to 15 minutes or until golden brown, stirring once!. Set pecans aside!.
Make 4 evenly spaced vertical cuts through each apple, stopping halfway from bottom!. Brush insides of apples with lemon juice!. Place apples in a 9-inch pie plate!.

Combine 1 tablespoon butter, raisins, and next 4 ingredients!. Stuff mixture evenly into apples, pressing into center of each apple!. Top evenly with remaining 1 tablespoon butter!. Pour cider, vanilla, and, if desired, rum around apples in pieplate!.

Bake at 350° for 1 hour and 20 minutes, basting twice every 30 minutes or until apples are tender!. Transfer apples to a serving dish, reserving juices, and keep warm!.

Pour juices through a wire-mesh strainer into a small saucepan!. Bring to a boil; reduce heat and simmer over medium heat 8 to 10 minutes or until mixture is thickened and is syrup consistency!. Drizzle over warm apples; garnish, if desired!. Serve immediately!.

Yield: Makes 6 servings

Easy Apple Dumplings

1 Granny Smith apple, peeled and cut into 8 pieces
1 package crescent rolls (8 rolls)
1 stick butter
1/2 cup water
1 cup granulated sugar
1/2 cup brown sugar
cinnamon/sugar mixture

Wrap each apple slice in a crescent roll triangle!. Place in a greased, shallow casserole!. Sprinkle brown sugar between the individual dumplings in the bottom of the dish!. Heat butter, water and sugar in a saucepan, and pour over the dumplings!. Sprinkle cinnamon/sugar mixture over the dumplings!. Bake at 350oF for 30 minutes!. This doubles easily!.

Caramel Apple Walnut Cake

Topping:
1/2 cup walnuts
salt
12 to 15 unwrapped candies, or 1/3 cup caramel cut from a block
3 tablespoons heavy cream or whole milk

Cake:
1 cup sugar
1/2 cup butter
1/2 teaspoon ground cinnamon
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
2 large eggs
1/2 cup sour cream or yogurt
2 cups all-purpose Flour

Filling:
2 large apples, peeled, cored, cut into 8 wedges each
2 tablespoons granulated sugar
1 teaspoon vanilla extract

Preheat oven to 350oF!. Lightly grease a 9" round cake pan at least 2" deep; or a 9" springform pan!.

Spread the walnuts in a single layer in an ungreased pan, and bake them for 8 to 10 minutes, until they're a light golden brown!. Remove them from the oven, and sprinkle very lightly with salt!. Set them aside!.

Beat together the sugar, butter, cinnamon, baking powder, salt and vanilla till smooth!. Add the eggs!. Beat till thoroughly combined!.
Stir in the sour cream or yogurt alternately with the flour, using the low speed of your mixer!. The batter will be stiff!.

Spoon the batter into the prepared pan, smoothing the top with a spatula as best you can!.
Toss the apple wedges with the sugar and vanilla till apples are thoroughly coated!. Arrange the apples atop the cake, pushing them into the stiff batter gently so they're partially submerged!.

Bake the cake for 65 minutes, till it's golden brown on top and a toothpick or cake tester inserted into the center comes out clean!.
Remove the cake from the oven, and turn it out onto a rack, apple-side up!.

Place the caramel and cream in a microwave-safe bowl, and heat till the cream is showing bubbles, and the caramel is soft!. Stir the caramel and cream till smooth!. Spoon the caramel over the cake, dripping it down into the crevices around the apples!. Scatter the walnuts on top!. Serve warm, or at room temperature!.

Per serving: 138 calories, 2 grams protein, 6 grams fat (36 percent calories from fat), 2!.1 grams saturated fat, 21 grams carbohydrate, 21 milligrams cholesterol, 89 milligrams sodium, 1 gram fiber!.

Apple and blackberry crumble
Cook 3 peeled and chopped apples with 150g blackberries, 2 tablespoons sugar and a pinch of cinnamon in a saucepan with 2 tablespoons water!. Place in a baking dish!. Rub 75g butter into 225g flour and stir in 75g sugar!. Spread onto the apple mixture and bake at 180°C/350°F/gas mark 4 for 30 minutes!.


Sausages with apples

Fry 6 of your favourite sausages in a little oil and keep warm!. Peel and cut an apple into chunks, melt a knob of butter and fry the apple slices until golden brown on all sides!. Serve with the sausages and some mash!.


Pork chops with apples and calvados
Fry 1 sliced onion in butter, and push to one side of the pan!. Add 1 peeled sliced apple and fry until tender, and again push to one side!. Fry 2 pork chops until cooked and browned on each side, mix everything in the pan together, then add a splash of calvados and a dash of double cream, bubble together and serve!.

Roast apples with pork
Next time you’re roasting a joint of pork, try adding some quartered apples to the roasting tin for the last 30 minutes!. Serve together and add cider or calvados to the gravy for extra flavour!.



Waldorf salad
In a bowl put 1 peeled and chopped apple, 2 sliced sticks of celery, a handful of toasted walnuts and some torn lettuce leaves!. Add a little mayonnaise, toss together and season well!.



Apple muesli
Add a grated apple, a large dollop of yogurt and a drizzle of honey to your favourite muesli, then leave to soak for 5 minutes!. Add cold milk for a delicious breakfast or brunch!.

Apples on toast
Fry slices of apple in butter until golden, add a sprinkle of brown sugar and heat until caramelised!. Beat 2 eggs with a splash of milk, dip in slices of bread until the eggs have soaked in, then fry in butter until golden and cooked!. Top with apples and serve hot!.

1 cup whole wheat pastry flour
