Sourdough bread, the crusty good stuff!.
Butter, the real stuff
Jack cheese, from Sonoma, if possible, thinly sliced
Whole Poblano chiles (canned are fine) in strips!.

Butter the inside of the bread, layer of cheese, then poblano chile strips, cheese again and another slice of bread!. Butter the outside of the sandwich and fry over medium heat in a non stick skillet until golden on both sides and the cheese is melted!.

Perfect Grilled Cheese Sandwiches

2 pieces good white French bread or sourdough bread or potato bread
3 slices cheddar cheese (Tillamook or your favorite, but Tillamook is so darned good! Real Cheddar from England would be acc)
2 tablespoons butter

Cut the slices of cheddar cheese; not too thick, but not skimpy, either; cut one slice in half!.

Take the two slices of bread and generously butter each of them on one side!.

Heat up a cast iron skillet over medium heat!.

Get yourself the cover from a Revereware saucepan, or another cover of about the same size!.

Place one of the slices of bread, butter side down, in the hot skillet!.

Spread 2 and a half slices of cheese on the bread, then cover it butter-side-up with the other slice of bread; eat the extra, unused half of the cheese slice!.

Push the bread down a little with the metal spatula, then cover the whole thing up with the saucepan lid (the idea is to heat the air up underneath the lid and melt the cheese faster as you're also browning the bread)!.

Uncover every minute and check the cooking bread color- you want it golden, not burnt (no matter what Mom says - she likes 'em black for some reason)!.

When it's to the color you like, carefully flip the sandwich over, press down on it with the spatula to squish the bread and cheese together, and re-cover with the saucepan to continue melting the cheese!.

After about 3-5 minutes of slow cooking, you'll have a wonderfully golden, melty, gooey grilled cheese sandwich!

2 slices of peasant bread
4 slices of Muenster cheese
2 slices of a big ripe tomato
salt and pepper to taste
2 - 3 tablespoons butter
non stick skillet
large spatula

Season tomato with salt and pepper!. Lightly butter one side only of each slice of bread!. Heat non stick skillet over medium high heat -- about 2 - 3 minutes!.

Place one slice of bread, buttered side down, in skillet!. Top with two slices of cheese, top cheese with both slices of tomato, then top tomato with remaining two slices of cheese!. Place remaining slice of bread on top of sandwich!. Allow bottom of sandwich to grill and brown until very toasted and golden -- about 2 - 3 minutes!.

Carefully slip large spatula under bottom of sandwich, hold top slice of bread in place with fingers of spare hand and flip sandwich to brown the other side!. Allow top of sandwich to grill and brown until very toasted and golden -- about 2 - 3 minutes!.

Remove from skillet to plate, let sit for about 1 minute, then slice sandwich down the middle!. Enjoy!.Www@FoodAQ@Com

Heat a non-stick skillet over medium low heat for a few minutes!. While the skillet is heating take two pieces of bread, spay one side of each piece with olive oil spray!. Put one piece oil side down in pan, add cheese (I prefer either cheddar or American cheese), top with the other slice of bread!. Once the first side is nicely browned, flip and brown the other side!. I like to have a comforting bowl of tomato soup along with the grilled cheese!.

I have some leftover homemade country french bread, and gruyere cheese from supper last night!. That would make a really nice grilled cheese sandwich!.

For my purposes!.!. although its a bit on the higher calorie side!.
Real butter, not margarine, as it browns so much more nicely!. Slices of a thicker cut of cheddar cheese, or real American cheese, not the "cheese food" type thing!.
Use a thicker bread or cut slices of an Italian deli bread for that lovely chewy crust!.

alright this is what i do!. i get 2 pieces of bread!. i butter both sides so al together theres 4 sides getting buttered!. i turn the frying pan on and let it heat up!. then i put american cheese on my bread!. you can put any kind of cheese but this is just my favorite!. i usually put around 5 slices inside the entire sandwich, 2 and 2, and then half of a piece over it!. alright then i sit the sandwich in the frying pan!. i let it chill for a little and then get a spatula and peek underneath to see if its golden brown yet!. also this could vary for you because you might like your sandwich light gold or dark brown!. then i flip it and do the same to the other side!. then, i usually enjoy it with a pickle slice and some potato chips! I like to put alittle salad dressing on my sandwich & then the cheese!. I usually use American (Velveeta) cheese!. Close it up & butter the outside of both slices!. Put in a frying pan over medium heat & when one side is brown flip it over to brown the other side!.Www@FoodAQ@Com
