How can I make sure my homemade french fries come out crispy?!


Question: How can I make sure my homemade french fries come out crispy!?
Answers:
Use Idaho potatoes as they are not a waxy potato!.

Add the fries to cold water and let stand for a bit to remove the starch

Drain well

Precook the fries until almost done

Re-fry the potatoes until crispy

You don't say how you're cooking them!. If you are baking them, try turning the heat up in the oven 25 degrees more than usual!. Be sure that the pan is lightly greased!.

If you're deep frying them, just keep them in the fryer longer than usual!.

And either way you cook them, be sure to blot them dry with paper towels to get the oil off!. Keeping the oil on will leave them wimpy and wilted!.Www@FoodAQ@Com

Cook them twice -

Use Maris Piper potatoes!.

Cut potatoes and rinse to remove starch

Dry in clean tea towel

Cook in oil at 130 degrees C until soft!. Remove from oil!.

Then cook fries again in oil at 190 degrees C until golden brown and crispy!.Www@FoodAQ@Com

Deep fry them and shake off the excess grease!. also the thinner the better for crispy fries!.Www@FoodAQ@Com

When I do mine, I cut then thinner/smaller!.!.(not as big around)!.!.!.and deep fry them, and cook them just a touch longer, !.!.a little more than golden brown!.*Www@FoodAQ@Com

cook them in hot grease until they brown up, pull them out of the grease and shake off the grease!.Www@FoodAQ@Com
