Make a spaghetti frittata:
* extra virgin olive oil
* leftover cooked, sauced spaghetti (2-4 cups)
* 3-4 eggs (depending on amount of spaghetti)
* a splash of half and half (or milk)
* 2 good handfuls of freshly grated pecorino romano cheese
* salt and pepper to taste

Pre-heat broiler!. Drizzle enough olive oil in an oven-proof frying pan to coat the bottom!. Heat pan over medium heat!. Add spaghetti and spread out the strands to cover the entire pan!. Let spaghetti heat-through stirring occasionally (about a minute or two)!.

Meanwhile beat eggs then add half and half, cheese, salt, and pepper!. Add egg mixture to the pan!. Let eggs cook, gently lifting up edges of the frittata to allow egg to run underneath and cook!. When eggs are mostly set, pop the entire pan under the broiler until top is fully cooked and lightly browned (about one minute)!. Carefully remove the frittata to a platter and slice into wedges!. Serve hot or at room temperature!.Www@FoodAQ@Com

Pasta Fritters
1/4 of a 16 oz!. pkg!. of capellini or spaghettini , cooked
~~~ OR ~~~ 1 3/4 cups leftover cooked noodles
salad oil
3 green onions, finely chopped
1/4 cup flour
2 tbsp!. grated Parmesan cheese
1/2 tsp!. salt
1/4 tsp!. black pepper
1 large egg
water, about 1/4 C

About 20 minutes before serving

1!. Coarsely chop cooked capellini; set aside!.
2!. In a small saucepan over medium heat, in 1 tbsp!. oil, cook green onions, stirring occasionally until tender and golden!.
3!. In a medium bowl with a wire whisk or fork mix flour, Parmesan cheese, salt, pepper, egg and 1/4 cup water; stirring in green onions and capellini until well coated!.
4!. In a 12” nonstick skillet over medium high heat, heat 2 tbsp!. of oil until very hot!. Into the oil drop mixture by scant 1/4 cups into 4 mounds, about 2 inches apart!. With pancake turner flatten each mound slightly!. Cook fritters until golden brown on both sides!. Remove to paper towels to drain; keep warm!. Repeat with remaining fritter mixture!.
Makes 8 fritters for accompaniment servings!.

Garlic Spaghetti

* 1 package (16 ounces) spaghetti
* 10 garlic cloves, minced
* 1/4 cup olive or vegetable oil
* 1/4 cup minced fresh parsley
* 2 teaspoons dried oregano or 2 tablespoons minced fresh oregano
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 1/2 cup grated Parmesan cheese

Directions:
Cook spaghetti according to package directions!. Meanwhile, in a skillet over low heat, cook garlic in oil until lightly browned!. Remove from the heat; stir in parsley, oregano, salt and pepper!. Drain spaghetti; place in a large bowl!. Add garlic mixture and Parmesan cheese; toss to coat!. Yield: 4 servings!. Www@FoodAQ@Com

Saute up some chicken or shrimp, add artichove hearts, a little garlic, and olive slices!. Toss in chopped tomatoes and capers at the last minute and top with fresh grated parmesan cheese!.

Make spaghetti pie!.

Have it with butter and salt!.

I like hamburger gravy or chili for a sauce for my chili sometimes too!.

Easy- add some italian dressing- throw in whatever- bell peppers, broccoli (raw or steamed), asparagus (steamed), carrots, olives, sundried tomatoes, artichoke hearts, I always add a can of kidney beans (drained and rinsed), parmesan cheese, lot of black pepper, a little crushed red pepper flakes, and a little basil or dill (either fresh or dried)!. So simple and leftovers are great!.

also easy- add combination of half milk and half parmesan cheese and cook over med heat on stovetop!. Add black pepper!. This also works with cream of chicken or cream of mushroom soup with 1/2 can of milk and 1/4 to 1/2 cup of parmesan cheese!.

This is my favorite- make some pesto or buy pesto from the store- I add crushed red pepper and bleu cheese!. Toasted walnuts sometimes!. Very good!Www@FoodAQ@Com

when there were some spaghetti leftover my grandmother makes a "frittata" a sort of omelette with eggs and parmigiano

you have to mix everything and then you fry it on both the sides

You could also add some grilled chicken to it!.
Or
Roast some cherry tomatoes brushed with olive oil, salt, pepper
Mix with 3 tablespoons oregano, 1 piece garlic, 3 green onions

Easy!.!. !.make a cold pasta out of it!. Do you have Italian dressing!. Use about 1/2 bottle and put noodles in a bag or bowl with dressing!. Mix up and chill for a lil while!. You can also add slice olives, pepperoni, or Italian seasoning to this! This recipe stays good for a week in the fridge!.Www@FoodAQ@Com

My favs are butter/parsley, and butter/chives!. Fresh oregano is really good too (but it's gotta be fresh)!.

How about buying a jar of ready made sauce at your supermarket to pour over the spaghetti!. Ask a clerk to help you find the sauces!. They are delicious!Www@FoodAQ@Com

if there is no sauce on them you can make lomein by adding sliced veggies maybe chicken or beef then heat it all up with some soy sauce!.
