Question: Type of melted butter used in seafood restaurants!?
i really enjoy crab legs and have made them at home a few times and melted some country crock butter but it doesn't taste the same as the melted butter at seafood restaurants!. does anybody know what kind of butter they use!?Www@FoodAQ@Com

They use clarified butter!. This is simply unsalted butter heated until it seperates into three levels!. The top foamy layer is the whey proteins!. The middle layer is the clarified butter!. The bottom layer is milk solids!. Skim the whey proteins off with a spoon!. Let the milk solids settle to the bottom!. Strain the clarified butter and milk solids through a cheese cloth to trap the solids!. Heat the clarified butter prior to serving alongside your crab legs!. Www@FoodAQ@Com

I work at a seafood restaurant as well as a few others, its regular unsalted butter, not margarine or margarine or butter flavor!. Its regular unsalted butter!.!.!.!.
most shellfish are salty so they use unsalted butter in 1 lb packs and melt it!.!.!.Www@FoodAQ@Com
