RASPBERRY FRIANDS
makes 8
prep 15min
cook time 20min
ingredients
cooking oil spray
1&1/3 cups plain flour
2/3 cup icing sugar plus extra for serving
2/3 cup of ground almonds
5 egg whites
125g frozen raspberries
100g butter (melted) or reduced fat margarine for a low fat version
preheat oven to 200 degrees/180 for fan forced spray friand pan with cooking spray!.
sift flour and sugar into a large bowl stir in almonds!.
using an electric mixer ,beat egg whites in a clean dry bowl untill foamy!.Fold into dry ingredience untill just combined!.Fold in raspberries and melted butter spoon btter into pans bake for 20min or untill golden and cooked when tested with a skewer transfer to a cooling rackcool completely dust with the extra icing sugar to serve and if you like serve with double thick cream and some pureed raspberries combined with icing sugar poured over the top YUMMY

NORMAL FRIANDS
Degree of difficulty: Low
You need:
180g unsalted butter, melted and cooled
200g icing sugar
60g plain flour
120g ground almonds
5 egg whites
Method:
Sift icing sugar and flour, add almond meal and combine!. Beat egg whites to very soft peak, fold through flour mix!. Gently fold in melted butter!.
Place mixture into well greased friand tin!. Bake at 180°C for 10 – 15 minutes!.
Variations
Blueberries, raspberries and mulberries are great additions to flavour your friands!. Reserve a tablespoon flour and toss with fruit before gently folding through friand mixture!.
BLUEBERRY FRIANDS
These keep well and are ideal for freezing
Could also be made with Creative Gourmet frozen Raspberries
Make mini Friands and serve after dinner with coffee
INGREDIENTS
1/2 cup plain flour
1 1/4 cups pure icing sugar
1 1/2 cups almond meal
1 teaspoon finely grated lemon rind
5 x 60g egg whites, lightly beaten
185g butter melted (1 cup) and cooled
1 x 300g pack Creative Gourmet frozen Blueberries
INSTRUCTIONS
Preheat oven at 200oC (fan forced 180oC) for 10 minutes!.Grease a 12 cup regular-sized muffin pan!.
Sift flour and icing sugar into a bowl!. Stir in almond meal and grated lemon rind!.
Use a metal spoon and fold in egg whites (they should be frothy not stiff)!. Gradually stir in the butter!. Half fill muffin pans with Friand mixture!. Sprinkle 3-4 frozen blueberries over the top and cover with remaining mixture!.
Bake for 20-25 minutes or until cooked!.Stand for 5 minutes then cool on a wire rack!. Serve warm dusted with icing sugar Keep in an airtight tin for up to 3 days or freeze
CREATIVE COMMENT :
If baking mini Friands use 1-2 blueberries and reduce baking time by 5-10 minutes
