HOMEMADE TOMATO CHEESE SOUP ... ?!

Ingredients:
1 tablespoon olive oil
1 medium sweet onion, diced
1 clove garlic, minced
1 (28 ounce) can peeled diced tomatoes or crushed tomatoes
1 (14 ounce) can chicken broth
1/2 cup chopped fresh basil leaf
1/2 teaspoon kosher salt
Cheese Toasts
1 baguette, cut into 12 thick slices
1-2 tablespoon olive oil
3/4 cup shredded Italian cheese blend (available in most supermarkets)
Method:
1For the Soup: In medium pot over medium heat, stir oil, onions and garlic until soft- about 3 minutes!.
2Add tomatoes, broth and basil and bring to a boil!.
3Reduce heat and cook gently for ten minutes, stirring occasionally!.
4Serve with cheese toasts (see below)!.
5For cheese toasts: Preheat oven to 350 degrees!.
6Place bread in a single layer on baking sheet, lightly brush top with oil, sprinkle each with a tablespoon of cheese!.
7Bake ten minutes until golden!.
8Serve 2 cheese toasts with each bowl of soup!.

1 clove of garlic, crushed
1 large potato, peeled and grated
fresh basil leaves
2 - 3 cups chicken or vegetable stock
1 tablespoon tomato purée
salt and freshly ground pepper to taste
1 tablespoon of olive oil
a knob of butter
Method:
Peel the tomatoes ( place tomatoes in to a bowl and pour boiling water over, leave a few seconds, the peel should come off easily )
sweat the chopped onion in the heated olive oil until soft
add the chopped tomatoes, tomato purée, crushed garlic, salt and pepper some of the basil leaves and stir
pour the stock over it and let it simmer for 30 - 40 minutes
grate a potato into the soup and let it simmer another 10 -15 minutes
blend it until smooth, if no pips are required push through a sieve
let some butter melt in the soup
decorate with basil leaves serve with olive foccacia!.

1/4 cup chopped fresh basil leaves
1/2 cup heavy cream, optional
Directions
Preheat oven to 450 degrees F!.
Strain the chopped canned tomatoes, reserving the juices, and spread onto a baking sheet, season with salt and pepper, to taste, drizzle with 1/4 cup of the olive oil and roast until caramelized, about 15 minutes, soooo !.!.!.next step -
Meanwhile, in a saucepan, heat remaining olive oil over medium-low heat!. Add the celery, carrot, onion and garlic, cook until softened, about 10 minutes!. Add the roasted chopped canned tomatoes, reserved tomato juices, chicken broth, bay leaf and butter!. Simmer until vegetables are very tender, about 15 to 20 minutes!. Add basil and cream, if using!. The fist answer is not a homade soup recipe it is just a mix of canned soups!.
My sister-in-law made this very basic soup once and I have been hooked ever since!.
Tomato Pepperoni Soup:
1 can diced stewed tomatoes
1/4 cup chopped onions
Quick splash of olive oil
About 17 pepperoni slices-sliced into strips
Italian seasoning!.
Saute the onions in the oil until translucent!. Add the tomatoes, pepperoni, and italian seasong to taste!. Simmer for a few minutes!.
This is sooo good!. You can add a some shredded or cubed chedder cheese and crackers when you eat it or for a creamy verision do this!.
This is even good with no salt added tomatoes as there is plenty from the pepperoni, and it tsill tatses just fine!.
Heat about 1/4 a package cream cheese in the microwave in a microwave safe dish!. (about 30 seconds is all) Add a little bit of the liquid from the soup and mix in!.until smooth!. Adding a little more liquid if neccesary!. Add back into the soup and mix well!.

You could also saute some onions and garlic in oil!. Add the diced stewed tomatoes, and some cubed velveeta or American cheese!. Mix until cheese is melted and well blended!. Season to taste!.Www@FoodAQ@Com
