How do I make mouthwatering Italian Sausage that doesn't turn mushy?!
I tend to always overcook Italian Sausage (loses flavor and becomes almost mushy to bite) and I'm always afraid of undercooking it!. I bought a package and want to just cook it up as medallions with some peppers and onions and serve it over penne pasta!. How long do I cook it, what's the best temperature to do it at!? It sounds like you're boiling the sausage!. That's the only method I can think of that would cause this!.
You don't boil Italian Sausages, you either saute', broil or grill them which concentrates the flavor of the sausages!. Boiling is a sure fire way to lose flavor!. What we do to make sure they're cooked through and to reduce the cooking time is slice the sausages into rounds while they're a little frozen so they don't get pressed down as they're being cut!. 20 to 25 minutes in the freezer will firm them up enough to cut!.
Then we lightly brown them in a cast iron skillet over medium to medium high heat, add in the peppers and onions, herbs, salt and pepper and saute that until the vegetables just start to become translucent and then add in the tomatoes!. When the tomatoes reach a simmer, we reduce the heat to low, partially cover it and simmer for 20 minutes or so and it's done!.Www@FoodAQ@Com

Put a little olive oil in your pan and get it hot over medium high!.
Put the sausage into the pan so it sizzles a bit and lower the temp to medium (or a little lower depending on how hot your stove top gets)
Cook for about 2 minutes on each side and then throw in your onions and peppers!. Make sure your pan isn't too hot while you're doing this, adjust temp if needed, you don't want to cook it too low or and definitely not too hot or you'll burn the onion!. After about 7-8 minutes, toss in your tomatoes!. Now you just have to cook it long enough to get everything hot again!.
That should do it!.

Depending on the type of sausage you get:
I usually stick it in the microwave to cook the inside then let it cool a bit then slice into what ever shape you what!. Then fry it up!.

Never had that problem!. Either leave it in larger pieces or keep the skin on it to cook!. Www@FoodAQ@Com
