Question: Recipe calls for TCM!. What is TCM!?
I'm doing a project for a culinary calculations class, and the recipe calls for something called TCM, which I have no idea what it is!. FYI, it's a recipe for Rabbit bate en Crout with Pickled Cherries and Stone Ground Mustard!. Specifically its in the Pate forcemeat if this helps!.Www@FoodAQ@Com

It is Tinted Curing Mix, a commercial product used in forcemeats and sausages!. It appears to be 94% salt/sodium chloride and 6% sodium nitrite!. A commercial brand is "InstaCure!." Good luck!.Www@FoodAQ@Com

TCM is short for (I believe) Traditional Chinese Medicine and includes herbs such as Ginseng and a few others!.

I believe if you do a search on Traditional Chinese Medicine you can find a list of herbs that are used in cooking!.
