It would depend on the recipe!. I love ginger, and use it in many of my recipes!. But you don't have to always use it!. Many different spices go well with chicken!. Rosemary, for example, is wonderful on chicken!. Here is a website that has thousands of great recipes, desserts too!. It's the one I use most often!. Just type in the word chicken into the search area, and you'll pull up a ton of great recipes!.

If I'm making an Asian or Polynesian style chicken then yes, I use ginger whether it be fresh ginger root or powdered!. I prefer the former but will use the latter in a pinch!.
For roasting chicken I use either a lemon pepper seasoning or a montreal seasoning as well as injecting the chicken with the flavors in a liquid blend!.
For BBQ chicken we will use anything from jerk chicken seasoning to simple bbq marinades or liquid smoke!.
For Mexican & Puerto Rican style chicken we use a lot of the adobo seasonings that have cumin and garlic!.
Overall, I would say we use garlic rather than ginger more often!. Www@FoodAQ@Com
