Freezing Thyme
Herbs frozen in plastic bags last 6 months; they wilt and darken when thawed, but are still tasty in braises!. To keep color and flavor fresh, beat chipped herbs into an equal measure of soft butter, and freeze the blend for use on boiled, steamed or baked vegetables!.

Thyme lamb chops
4 (4 ounce) bone-in center-cut loin lamb chops, (1 1?2-inches thick)
1/2 tablespoon(s) kosher salt
1/4 teaspoon(s) freshly ground pepper
1 tablespoon(s) canola oil
2 tablespoon(s) unsalted butter
1 clove(s) garlic, finely chopped
1 teaspoon(s) fresh thyme, chopped
DIRECTIONS
Sprinkle lamb with salt and pepper!.
In a large skillet, heat oil over medium-high heat!. Add lamb and cook 3 minutes per side, or until well browned!. Reduce heat to medium; add butter, garlic, and thyme!. Cook, turning lamb occasionally, for 3 minutes, or until instant-read thermometer inserted in side of each chop registers 130 degrees F!. Chicken!. Or in fact any meat dish at all!. Thyme has a similar taste to rosemary and bay leaves, Fry some chicken legs in a pot with tomatoes and garlic!. Add bay leaves!. Throw in a glass (at least) of wine (red or white), When the alcohol smell goes, add some stock (chicken or vegetable preferably) to cover the chicken!. Add your thyme, salt and pepper!. Stew for hours on a low heat!.

I don't have a recipe, but you can chop it up in a food processor or blender, add a little bit of water, and freeze it to use later!. It won't have the same texture, but you'll still get the fresh flavor!. You could freeze it in ice cube trays, put the cubes in a bag, and pull one out for just the right amount of seasoning later on!. Www@FoodAQ@Com
