grilled potaoe salad
1 1/2 pound(s) baby red potatoes, scrubbed
1 tablespoon(s) cider vinegar
1 tablespoon(s) prepared horseradish sauce
1/2 teaspoon(s) salt
1/2 teaspoon(s) pepper
3 tablespoon(s) olive oil , plus extra for grilling
1/3 cup(s) sliced celery
3 tablespoon(s) thinly sliced scallions
1 teaspoon(s) fresh thyme leaves, chopped
1 large yellow bell pepper, quartered lengthwise and seeded
DIRECTIONS
Boil potatoes in medium sauce pan 15 minutes, until just tender!. Drain; rinse under cold water, drain again!. Halve potatoes, chill 30 minutes!.
Meanwhile in a large serving bowl whisk vinegar, horseradish sauce, salt, and pepper, whisk in olive oil!. Stir in celery and scallions and thyme!. Set dressing aside!.
Lightly brush the grill rack with vegetable oil!. Lightly brush potatoes and pepper with olive oil, grill potatoes and pepper 10 minutes, turning frequently until browned and slightly charred!.
Remove to a cutting board and dice pepper!. Stir into dressing and add potatoes!.

Herb Roasted Potatoes
Clean and cut 3 medium potatoes into bit sized cubes!. Bring salted water to boil and boil potatoes for 5 minutes!. Drain!. Drizzle olive oil in the bottom of a long baking dish!. Add potatoes in one layer!. Drizzle with 2 T olive oil and shake pan to coat!. Sprinkle with 2 t!. garlic salt (or sea salt), black pepper to taste, and one herb (I prefer rosemary but basil, dill, or chives would work too)!. Roast in the oven on the high rack for 25 minutes!. When potatoes are cooked through, turn on the broiler just for a minute until potato tops are lightly browned or crisped!. Wonderful with anything (chicken breast, sausage)but yummy by themselves!.Www@FoodAQ@Com

If you have some milk, you can make mashed potatoes!. If no milk, but you have some oil, make hash browns or home fries!. Or you can just make baked potatoes!Www@FoodAQ@Com
