im a serious chile head and can and will tell you that chili that is to hot for most people is a waste!. add chile peppers for the heat they contribute but in small amounts!. each variety of chile pepper has its own different flavor apart from the heat!. I dont like habanero peppers because they have a very bitter after taste!. scotch bonnet peppers although hotter on the scovil scale have a very nice fruity after taste that compliments a good chili!. I make my chili about in the medium range which is still to hot for 80% of the population!. so when i make it i make it hot how i enjoy it!. when making it for others i tone it down a bit!. making chili super hot like in most chili competitions is a waste!. the heat over whelms the flavors of the different meats and spices used!. what a waste!. chili is meant to be a melting pot of flavors when prepared properly!. just my opinion!.
BTW chile as you spell it refers to the pepper itself
