Chitlins with Rice
* 1 8-inch or 9-inch round pan
* 2 Tbs Brown Sugar
* 1 Egg white
* ? Cup Canola Oil
* ? Cup Buttermilk
* ? Cup pureed Cooked Sweet Potato
* 1 Cup Martha White Cornmeal
* 1 Cup Unbleached White flour
* ? teaspoon Salt
* 1 Tablespoon Baking Powder
Directions:
Preheat over to 350 degrees!. Spray an 8-inch square or 9 inch round baking pan with a light coating of vegetable oil!. Set aside!.In a large bowl, beat the brown sugar, egg, egg white, canola oil, buttermilk and sweet potatoes until frothy!. Sift together the cornmeal, flour, salt and baking powder into the mixing bowl!. Gently fold the ingredients until just mixed!. Pour the batter into the oiled pan and bake for 20 - 25 minutes, until a knife inserted into the center comes out clean!. Serve hot or at room temperature!. Www@FoodAQ@Com

I worked in My father's butcher shop when I was a kid!.
The Chitterlings weren't so bad( like a sausage casing) and they came frozen and in a container!.
But with the chit's people would buy "Hog Maw's"( Pig Stomachs) and they are the most disgusting thing I ever put my hands on!.
Not at all like "Honeycomb Tripe"!.
These things sat in a bucket of slime!.
Gross!.
