My mom makes really good frosting!. It is super easy and you can make it as thick or thin as you want by just adding more sugar!.

Basic Butter Cream Frosting

* 2 tablespoons butter
* 1 cup confectioners sugar
* 2 tablespoons milk, cream, sherry, rum or brandy
* 1/2 teaspoon vanilla

Cream butter and sugar well, add the flavoring and liquid until mixture is smooth!. Www@FoodAQ@Com

Here are two kinds:

FLUFFY WHITE FROSTING
1/2 c!. white shortening
2 c!. confectioners' sugar
1 c!. marshmallow fluff
1 tsp!. almond extract
3 to 4 tsp!. milk

Mix with electric mixer until creamy smooth!. This makes enough to frost one 9 x 13 inch cake!.

Cream Cheese Icing:
1 pkg!. (250 g) PHILADELPHIA Brick Cream Cheese, softened
1/4 cup butter, melted
2 cups icing sugar
1 tsp!. lemon juice
1/2 tsp!. grated lemon peel
Icing: BEAT cream cheese and butter in large bowl with electric mixer until well blended!. Gradually add icing sugar, juice and peel, beating until well blended after each addition!. Spread on top of cake!. Store leftover cake in refrigerator!.Www@FoodAQ@Com

I am not sure how much icing you need -- but this will make enough for a 2-layer cake or a 9 x 13 sheet cake!. It is very easy and delicious!. Just melt a stick of butter (1/2 cup)!. Then add powdered (confectioner's) sugar until you get the consistency you want -- probably 2-3 cups!. It will taste fairly sweet, but after about 20 minutes, the butter flavor comes through and it is delicious!. If you do get it too thick, add a pinch of milk -- and I mean just a pinch, about 1/2 teaspoon at a time!. By the way, don't add vanilla flavoring -- it overpowers the delicious butter flavor!. This icing tastes like the white icing that is on a wedding cake -- yum!!!Www@FoodAQ@Com

I usually make the one on the back of the box of confectioner's sugar and everyone loves it!. It can be thickened and thinned easily as well!.Www@FoodAQ@Com
