Question: Has anyone got any tasty, simple recipes for salmon!?
Salmon for dinner tonight, but I'm a bit bored with what I normally do - that's bake it with lemon juice and dill!. *yawns*

Nothing too spicy, or the children won't eat it, and with normal store cupboard ingredients!.

I intend to serve it with fluffy, creamy mashed spuds, peas, carrots and broccoli!.

I normally do a teriyaki salmon

1/2 cup Soy sauce
1 tblspoon brown sugar
2tsp ginger
2 cloves garlic chopped fresh or garlic powder
a dash of orange juice or pineapple juice
Mix ingredients and marinate!.Www@FoodAQ@Com

chinese style baked salmon

Ingredients:
1 salmon trout weighing approximately 900g
1 large clove of garlic, crushed
2!.5cm piece of root ginger, peeled and chopped finely
6 spring onions, shredded
15ml spoon sunflower oil
5ml spoon cornflour
3x15ml spoons dry sherry
2x15ml spoons soy sauce
2x15 ml spoon water
15ml spoon white wine vinegar
a few drops of Tabasco sauce
coriander leaves (optional)
Method:
Preheat the oven to 180°C, 350°F or Gas Mark 4!.

Clean and scale the fish, or have this done for you at the fish counter!.

Mix the garlic, ginger and spring onions, and stuff the body cavity!. Wrap the fish in oiled double foil and seal it carefully!. Bake for 25-35 minutes or steam, without foil, for 20 minutes!.

Blend all the sauce ingredients together in a small pan and slowly bring them to the boil, stirring continuously!.

Put the fish on a warmed serving plate, pour over the sauce and garnish it with coriander leaves, if you like!.

Season it with salt and pepper and grill it or pan cook it!. You can bake it to!. We like this sauce when we go for a sauce!. We usually eat plain but this sauce is soo yummy and is on the back of the Knorr package!.

4 Tbsp butter
1/4 cup finely chopped red or yellow onion
1 medium tomato, chopped
1 cup milk
1 package Bearnaise sauce mix we use Knorr
1 Tbsp!. small capers, rinsed and drained (optional)

Melt 2 tablespoons butter in a large nonstick skillet and cook onion, stirring occasionally, 2 minutes!. Add tomato and cook 1 minute!. Stir in milk, Bearnaise sauce mix and remaining butter and bring to a boil!. Cook, stirring constantly, until sauce thickens, about 1 minute!. Stir in capers and pour sauce over salmon!.Www@FoodAQ@Com

Fish:- Salmon and Chive Quiche
350 Gram Shortcrust pastry (12 oz)
1 x 212 Gram Can salmon, drained (7 1/2 oz)
3 Tablespoon Fromage frais
2 Eggs, beaten
150 ml Single cream ( 1/4 pint)
2 Tablespoon Milk
Salt
Freshly ground black pepper
4 Tablespoon Fresh chives, chopped
Method
Roll out pastry and use to line a 23 cm (9 inch) loose bottomed flan ring!. Bake 'blind' at 200 °C / 400 °F / Gas 6 for 25 minutes!.
Coarsely flake salmon and arrange in base of flan case!. Blend fromage frais, eggs, cream and milk!. Season, add chives and pour into flan case!.
Bake at 190 °C / 375 °F / Gas 5 for 40 minutes until risen and golden!. Serve hot or cold!.
You can also make this with some poached fresh salmon if you like!.

This was my favorite way to eat fish when I was a kid and its still a fav to make for my family!.

Beer Battered Fried Fish

1 egg
1 c!. warm stale beer
1 1/8 tsp!. baking powder
1 c!. flour
2 tsp!. salt
3/4 tsp!. pepper
1 tsp!. garlic salt
Fish fillets

Mix all ingredients!. Wash and dry fish (pat with towel)!. Cut fillets to desired size!. Heat 2 inches of cooking oil in pan!. Dip fish pieces in batter; fry briefly in hot oil turning as necessary!. Adjust the batter ingredients as needed so it doesn't get too thick or too thin!.

This is my mom's recipe and it is delicious and very easy!. Just roll the salmon in flour so it has a light dusting!. The brown it in olive oil -- it will get a nice brown, sort of crust, on the outside!. Try to turn it only once!. It the pieces are thicker, I always try to brown the sides of the salmon too!. I would mix breadcrumbs with herbs and garlic powder or minced garlic, and finely chopped parsley, and press the salmon into the breadcrumbs to make a crust!. Broil the salmon until done and breadcrumbs are browned!.Www@FoodAQ@Com

Mix with egg, salt and pepper, make a pattie coat in saltine cracker crumbs and fry in oil, sooo good!.Www@FoodAQ@Com

Mix together breadcrumbs, chopped garlic, pinch of salt, lemon zest and butter or oil until the crumb mix is just moist enough to squeeze and hold a shape!. Then spread dijon or guldens mustard over the top of your salmon, Spread the crumb mix over the top of that and press lightly, sprinkle with white wine and bake in a 400 degree oven for about 15-20 minutes depending on how you like your salmon!. (when it flakes with a fork it's done though)!. If the top isn't golden, you can pop it under the broiler for a few seconds, but watch closely!. Sounds like a good dinner to meWww@FoodAQ@Com
