Here I am! I'm italian, so I'll try to explain the real pasta alla carbonara recipe, but sorry for my english!
I'll give you the recipe for 4 PERSONS!!
It's a very simple recipe, but we use some ingredients that are difficult to find out of Italy!.
Of course the best type of pasta to use in this recipe in spaghetti, you need 350 gr (well, do you know how to cook pasta correctly!? let the water boil, then put an handful of salt, and then put pasta inside and drain when it is "al dente" [not too squashy], I'm sorry, it's a very simple issue but I don't know if you know it in GB!.!.!.)
SO cook your spaghetti, in the same time make little cubes with 150 gr!. of bacon (we use "guanciale" that is the cheek of the pig, but I guss you don't have it in GB), put it in a pan with two spoons of oil and make it fry untilthe fat become transparent and crispy!.
Meanwhile shuffle 4 yolk and 1 whole egg with 100 gr of "pecorino" (do you have pecorino!? it's a hard cheese made with milk of sheep, if you don't have it, you can use parmesan), a spraying of pepper and if you want salt!.
Drain pasta and immediately join bacon with eggs, then amalgamate all together out of the cooker!.
You can put more pecorino and pepper if you like it!.
And that's it!
I hope to be helpful!
Ciao!

Fry bacon in skillet over medium heat until crispy, remove and drain on paper towel!. Chop with knife into bits!.
Beat the eggs, cheese and cream in a bowl, then add the bacon!. Pour over the pasta in the pan and toss gently using tongs!.
Return the pan to a very low heat and cook for 1 to 2 minutes, or until slightly thickened!. Don't overheat or the eggs will scramble!. Season well with black pepper and serve!.
