Chicken with Tomatoes, Peppers, and Olives

1 (3 to 3 1/2 pounds) chicken, cut in 8 pieces
1 medium onion, chopped
1 large green bell pepper, seeded and chopped
1 can(s) (14 1/2 ounces) stewed tomatoes
1/2 teaspoon(s) dried oregano
1/2 cup(s) chopped salad olives, (green olives and pimentos)

DIRECTIONS
Heat a large nonstick skillet over medium-high heat!. Sprinkle chicken with salt and pepper!. Cook over medium heat 10 minutes per side!. Remove and set aside!. Discard all but 1 tablespoon fat!.
Add onion and cook 6 minutes, stirring occasionally!. Stir in green pepper, cook 4 minutes!. Add tomatoes, oregano, and 1/4 cup water and bring to a boil!. Return chicken to skillet, cover, and simmer 10 to 15 minutes, turning after 5 minutes!. Stir in olives and simmer 5 minutes!.

Weight-Loss Protein Bars
Ingredients
12 ounces mori-nu silken lite firm tofu (349g)
2 egg whites
8 scoops carb solutions high protein shake mix, vanilla (4 servings)
1 cup quick oatmeal
1 cup Fiber One cereal, original
3 (1 g) packages Splenda quick packs
4 tablespoons dried blueberries

Preheat oven to 350

Spray an 8x8 pan with veggie oil and coat with oat flour (oatmeal finely ground, I made mine in the blender)!.

Mix all the tofu, apple (diced) and egg whites in a blender!. Mix well!. Small lumps are fine and adds texture!.

Pour into a bowl, add in the protein powder, dried fruit and Splenda, stir!. Add oatmeal and Fiber One, stir well!. Batter should be very thick and lumpy!.

Spoons into 8x8 coated pan (see step 2), and press in to the corners and flat with a spoon!.

Put in the oven for 20-30 minutes!.

Monitor closely! Oven temps vary! The bars should very light brown on the top, but the middle will still be a little wet when tested with a knife!. Tofu hardens upon cooling!. They are better underdone rather than over!.

Let cool completely in the pan then cut into 12 bars!. These are dense bars, and keep in the fridge for up to two weeks in an airtight plastic container!.

VARIATIONS: CHOCOLATE: sub berries and vanilla protein mix, add chocolate protein powder and 1/4 c Hershey powder!. PUMPKIN: sub berries and apple, add 1 cup solid pack pumpkin and 1 teaspoons pumpkin pie spice!. LEMON: sub berries, add 1 tbs lemon zest and 2 tbs juice!.

1 (8 ounce) can straw mushrooms
1 (8 ounce) can bamboo shoots, drained
