Both of these are from my families favorite recipes!. They are both easy and delicious, enjoy!
Porcupine Balls
1 egg
? cup water
1 envelope lipton onion soup mix
1 ? lbs lean ground beef
? - ? cup uncooked minute rice
1 – 46 oz bottle of Campbell Tomato Juice
1 tsp sugar
Beat egg slightly with water and 2 tbs soup mix!. Mix lightly with beef and ? cup of rice!. Shape into large meatballs (1 ? to 2 inches)!. Roll in remaining rice, pressing it lightly into the meatball!. Use more rice if needed!.
Heat tomato juice to boiling!. Stir in remaining onion soup mix and sugar!. Place meatballs in sauce and cover!. Simmer, stirring several times for 50 minutes!.
Serving suggestions: Great with a vegetable or salad and rolls!.
Quick Chicken Parmesan
4 Boneless Chicken Breasts, pounded flat
1 jar Spaghetti Sauce (I use Prego mushroom and garlic)
3 oz!. Mozzarella Cheese, grated
2 cups Italian Bread Crumbs
2 oz!. Parmesan Cheese
1/2 tsp garlic salt
1 egg, plus 1 tbs water, slightly beaten
Mix Italian breadcrumbs, Parmesan cheese, and garlic salt together in bowl!. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt!. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 – 15 min each side)!. Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve!. Makes 4 servings!.
Serving Suggestions:
I serve this with Fettuccini Alfredo and garlic bread!.

1 – 8 oz!. Package Philly Cream Cheese (I use the light version – 1/3 less fat), cubed
? cup (3 oz!.) fresh grated Parmesan cheese (I like De Giorno, don’t use Kraft)
? cup margarine (I use I Can’t Believe It’s Not Butter Light)
? cup milk or half and half (I use 1% or 2% low fat)
8 oz!. fettuccini, cooked, drained (I use the fresh Contadina low fat one)
In large saucepan, combine cream cheese, Parmesan cheese, margarine and milk!.
Stir over low heat until smooth!. Add to drained fettuccini and toss lightly!. Sprinkle with fresh Parmesan cheese if desired!. Makes 4 servings!.
Serving Suggestions:
I serve this with chicken Parmesan, salad, and garlic bread!.

1 unbaked 9" pie shell
1 lb!. ground beef
1/2 cup tomato sauce
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1 tsp!. instant beef bouillon granules
3 eggs, beaten
2 Tbs!. flour
8 slices American cheese, divided
Heat oven to 425!. Bake pie shell for 8 minutes; remove from oven!.
Reduce temperature to 350 degrees!. Heat a large skillet over medium
heat; add beef!. Cook until brown and crumbly, about 5 minutes!. Add
tomato sauce, onion, bell pepper, and bouillon!. Cook until bouillon
dissolves; remove from heat!. Add eggs and flour; mix well!. Tear 6
cheese slices into small pieces!. Stir cheese into beef mixture;
spoon into pie shell!. Bake pie for 25 minutes or until filling is
heated through!. Cut remaining cheese slices into triangles!. Arrange
triangles in a spoke-fashion on top of pie!. Bake for about 3 minutes
longer, or until cheese is melted!. Cut pie into wedges!.
VARIATION: For a delicious flavor variation, use Swiss or Provolone

1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1? pounds ground beef
? cup green and/or red bell pepper – finely chopped**
2 Tbsp!. chopped onion**
1 pkg taco seasoning mix (? cup)
1 (8-oz) can tomato sauce
? cup mild salsa
2 cups shredded cheddar cheese
Combine biscuit mix and water, stirring with a fork until blended!. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish!. Bake at 375oF for 9 minutes!.
Combine sour cream and Ranch dressing!. Spread over baked crust and set aside!.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well!. Stir in tomato sauce, salsa or picante sauce, and taco seasoning mix, spoon over Ranch filling!.
Sprinkle cheese evenly over meat mixture!. Bake at 375oF, uncovered, for 20 minutes or until casserole is lightly browned!. Cut into 12 squares to serve!.
** If serving to picky children, you can omit the bellpepper and use 2 tsp!. onion powder instead of fresh onions!. Omit salsa and add a second can of plain tomato sauce!.

1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning
Garnishes (any or all)
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese
Brown ground beef over medium heat in large stock pot!. When nearly cooked, add onions and sauté w/ ground beef!. When onions are wilted but still opaque, stop cooking and drain off any fat!. Return to heat and add remaining indredients!. Cover and let simmer at least 30 minutes, or up to about 3 hours!. (Can be held longer in a slow cooker set on Low!.)
Serve in bowls w/ crushed corn chips in the bottom!. Top each bowl w/ garnish of choice!.

Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat!. Add one chopped onion, cook briefly and add 1 cup of chicken broth!. Cook about 3 minutes then add one jar of spaghetti sauce!. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes!. Meanwhile, cook some spaghetti following directions on the box!. Drain the pasta and serve the chicken and sauce over the pasta!. Add some bagged salad and Italian bread and there’s a meal!.
Feeling more energetic!? Dip the chicken into beaten egg and roll in bread crumbs & Parmesan cheese before frying it and call it Chicken Parmigiana!. Recipe for that-

Water
Juice from 2 lobsters
1 tsp!. salt
1 c!. uncooked rice
1/4 c!. butter
1/4 - 1/2 c!. chopped celery
Meat from 2 lobsters
1 can Chinese style vegetables, drained
Early in day, use water and juice of lobster to make 2 cups!. Bring to boil with salt!. Add rice!. Cover and simmer!. Do not peek at rice and keep tightly covered!. Simmer for 20 minutes and remove from heat, without removing lid!. In 10 minutes, fluff with fork!. Cover and put in refrigerator!.
Put in fry pan butter and celery, simmering until celery is half cooked!. Add lobster meat and fry!. Add rice and stir all together!. Add more butter if dry!. Add 1 can of Chinese style vegetables!. Stir it all up and heat through!.

Get some noodles doesn't matter what kind elbow or spiral whatever you like!. Cook them set aside!. Cook hamburger until completely cooked!. Add some seasoning salt to the hamburger!. Add the hamburger to the noodles!. Then take some Valletta cheese and milk and add to the noodles until it looks how you want I melt the cheese and milk first!. then put in a baking dish spread out and top with shredded cheese!.
