Alligator meat, use tenderloin fresh alligator tail
cayenne pepper to taste
salt and pepper to taste
vinegar
white flour and cornmeal
oil
Cut flesh not exceeding 2 x 1" thick!. Place cut pieces in non reactive dish and sprinkle with vinegar!. Salt and pepper pieces, sprinkle with cayenne pepper!. Let marinate for 30 minutes!.
While marinating, mix 4 parts cornmeal with 1 part flour in a large paper bag!. Heat 1" of oil in large skillet to 400 degrees!. Place alligator pieces in bag, shake well!. Fry in hot oil until golden brown!. Serve hot!.Www@FoodAQ@Com
