Most people have/will tell you to use Granny Smiths!. I pick about 2 or 3 of about 3-4 different flavors!. One kind of green/tart apple for sure and then what ever else looks good that day!.
I peel, core and thickly slice the apples!. I cook about 1/3 of them with water- cinnamon, sugar, and flour all mixed together!. Let the mix thicken, cool then add the remaining apples!. Cool the apples to at least room temp!. Add a layer of apples A nd a few pats of butter if you want!. Repeat, and top with second crust or crumble topping!.
I will probably get a bunch of thumbs down for this but it works!. The cooked apples make a nice smooth type filling and contrast nicely with the crisper apples!. Www@FoodAQ@Com

You need an apple that has a great taste, but also holds up its texture!. It's not the best pie when your cooked apples turn to mush!. I like using a combination of granny smith (because of their tartiness), and golden delicious(for their sweetness)!. Together, they make an excellent pie!.
You could use almost any apple, but stay away from McIntosh and Cortland!. They break down when cooked!.Www@FoodAQ@Com
