Question: Are any red varitey of apples good for cooking with!?
I just asked a question and it was a resounding granny smith for apple pie!. What about apple crips, cobbler or something else!. Can i use red apples for any of those and do you have a recipe Www@FoodAQ@Com

i mix several varieties of apples in my apple based desserts like pies, cobblers, crisps, turn overs, etc!. i like fuji apples mixed with rome, gravenstien, and breaburn and one granny smith apple!. the following paragraph is from america's test kitchens found on their deep dish apple pie!.

Use a combination of tart and sweet apples for this pie!. Good choices for tart are Granny Smiths, Empires, or Cortlands; for sweet, we recommend Golden Delicious, Jonagolds, or Braeburns!. Www@FoodAQ@Com

There are about thirty different varieties of red apple!. Some like Rome Beauty are great for cooking!. Others like MacIntosh become mushy when heated!. Red Delicious is popular only because it grows quickly and transports well - it's at the bottom of the list for eating and for cooking!.Www@FoodAQ@Com

The best cooking apples (at least in Ontario) are Northern Spy, Courtland, Ida Reds!. They hold their shape and are a nice balance of sweet and tart!. I made an apple crisp yesterday with the Northern Spy and it was to die for!.Www@FoodAQ@Com

The problem with using a red apple in these desserts is their texture!. The red apples tend to cook away, whereas the granny smith holds its own in cooked recipes!.
