A higher fat item like a chuck roast or briskit can cook for hours and hours at around 225 to 250 and come out fork tender!. 325' is the best temperature!.!.!.The best way to keep it moist is to season it and then brown your roast on the stove top and then cook it in the oven at 325' about 15 to 20 min a pound!. Just don't cover the roast or it will become tough!.Www@FoodAQ@Com

Start out at 450F for a short time to brown the outside!.
Then reduce to 300F for slow cooking, use a meat thermometer!.

300 - 325 is good, but i recommend a crock pot!. It comes out really tender and flavorful!. Plus you can put it in in the morning and it will be ready by dinner!.
