325' is the best temperature!.!.!.The best way to keep it moist is to season it and then brown your roast on the stove top and then cook it in the oven at 325' about 15 to 20 min a pound!. Just don't cover the roast or it will become tough!.Www@FoodAQ@Com

300 - 325 is good, but i recommend a crock pot!. It comes out really tender and flavorful!. Plus you can put it in in the morning and it will be ready by dinner!.
