Cooked Potatoes Safety?!


Question: Cooked Potatoes Safety!?
How long can you leave boiled potatoes out and still eat them safely!? My husband left the potatoes in the pot overnight!. (It was his turn to put away the leftover and I forgot to check that he had did so!.) I brought it in to show him what he did when I noticed them sitting there 15 hours later and he ate one of them!. I threw the rest away and told him off for eating it!. His mother says that there is nothing wrong with what he did!. Was I wrong in giving him heck and throwing the potatoes out!? In a commercial kitchen he would've been fired for what he did in leaving the potatoes out for over 2 hours!. In a commercial kitchen the F!.D!.A!. and local county health departments could use their authority to cancel his business operations license!. He is lucky I am not a food safety inspector or he'd get an unpleasant surprise visit to check the safety and cleanliness of his commercial kitchen operations!.Www@FoodAQ@Com

No it was not safe!. Especially potatoes, they can easily bread pathogens in them that leave toxins that can't be cooked out!. I took a food safety class years ago, so I can't remember the exact name, but potatoes are surprisingly vulnerable!.

My MIL seems to believe that hard boiled eggs can safely be stored at room temperature for days!.

Of course they were safe to eat!.
I regularlly leave cold drained boiled potatoes out overnight, so they will be nice and dry for fried potatoes at breakfast!.
