If I re-process jam without opening the jars, will it set?!
I made ham 5 hours ago and it hasn't set!. Im going to wait until the morning and see because the apple jam recipe says to set aside 12 hours to let it set, and the Blackberry was made exactly the same way, but just in case it doesn't, can I just re-process the jars for another 10 minutes without opening them to get it to set!? also, is 12 hours or more normal setting time!? Does it usually take that long!? My recipe only said the boil the fruit, add sugar and rapid boil for 1 minute and I did that, so Im just crossing my fingers that it will set!.Www@FoodAQ@Com

The jam won't set by just reprocessing!. The jam inside the jars won't get hot enough to do any thing significant!.
Let the jam sit a week and check it!. If it's still runny your going to have to take all the jam out of the jars and reboil it to try and thicken it up!. You may want to add some more pectin (liquid) to thicken even more!.
A pain to do but all you will have is a lot of runny stuff you can use on ice cream or hams!.
Are you testing the hot jam to make sure it's setting!? Put a saucer in the freezer for about 10 minutes!. After the jam has been boiling at a good running boil, take a spoon full of jam and put it on the frozen saucer!. Tilt the saucer to see if it's runny!. If it still is, cook some more and test again!.Www@FoodAQ@Com

Processing jam doesn't make it set!. It is the pectin in the fruit or that you add when you cook it that will help it set!. I would go to the Certo (the pectin brand) website and see if you can re cook it with pectin and then re-jar it!.Www@FoodAQ@Com
