Recipe substitution help?!


Question: Recipe substitution help!?
So, i found a really great recipe For cranberry muffins you are supposed to use nuts and orange peel with the cranberrys, buti dont have any nuts or orange peet, do you think it could be okay if i did no nuts and either no peels, or a lime peel or something!. tell me soon please, because i wanted to make them tonight!.

here is the recipe:

· 1 1/2 cups chopped fresh or frozen cranberries
· 1 1/4 cups sugar, divided
· 3 cups all-purpose flour
· 1 1/2 tablespoons baking powder
· 1/2 teaspoon salt
· 1/2 cup butter or margarine
· 2 eggs, lightly beaten
· 1 cup milk
· 1 cup chopped pecans or walnuts !?!?
· 1 tablespoon grated orange peel !?!?
Preparation:
Toss cranberries with 1/4 cup of sugar in a bowl; set aside!.
In a mixing bowl, combine flour, baking powder, salt, and remaining 1 cup sugar!. Cut in butter until mixture resembles coarse crumbs!. Combine eggs with milk; stir into flour mixture until just moistened!. Gently fold in nuts and orange peel and cranberries!. Fill paper-lined muffin tins two thirds full!. Bake at 400° for 20 to 25 minutes!. Makes about 18 muffins!.

Answers:
I would simply omit the nuts and the orange peel as neither are needed for the recipe to be a success!. One change I would make would be to add a tsp of flour to the sugar that you toss the cranberries with!. This will make them hold their position in the batter while they bake and not sink or float!.
If you wanted, you could add a little grated coconut or shred some carrot or zucchini into it!.Www@FoodAQ@Com

you can leave out the nuts and it will be fine!.
as for the peel it takes away some of the bitter taste you get from the cranberries!. It won't make the muffins taste gross if you leave out the peel also!.
i wouldn't use lime if you were substituting anything i would use lemon peelWww@FoodAQ@Com

try this:
instead of the milk, substitute 1 cup of orange juice, and 1/3 cup of dry milk!.
nuts can be left out!.
if no peels, don't use lime, or grapefruit (all citrus), maybe lemon, but it can be left out!. it adds a lot of flavor though!. cranberries and oranges go together!.Www@FoodAQ@Com
